I've been to Pablo y Pablo many times over the past several years and it's always been a favorite because they accommodate large tables and have a reasonable reservation/waiting system. I came on June 25th with several friends from out of state. Many had been before and were looking forward to returning. The hostess was great, but while we waited for our table, staff rudely asked us to move despite us already trying to stand out of the way. We were seated without utensils or napkins, and on this hot day, we repeatedly had to ask for additional water. We ended up grabbing the water pitchers that were baking on the window ledge ourselves. My friend ordered a soda and the wrong one came; we corrected our server, who fixed it, but we were still charged at the end of the night. Several drinks came late, we were never offered refills for water or drinks, and many people in our party said the food was so spicy it was inedible (which is odd for our group). Our server, to her credit, was very friendly but clearly immensely inexperienced. When we asked what was in the birria, she said, "I'm not sure. Some things are so good we just don't ask questions." While I appreciate the humor, a better response would have been, "I'm new here so let me check with the chef." Several of the items arrived incomplete (birria came without broth, for example) and when the food did come, we had to ask for utensils several times before we just got up and grabbed them ourselves, to which a server asked that we not. I saw several other tables helping themselves to the water pitchers as well. We sat inside and the large windows had no curtains and there seemed to be no A/C, so people facing the windows were dripping with sweat. All staff except our inexperience server and the friendly hostess were cold and appeared grumpy. We didn't bother to fix the incorrect charges at the end of the night because our server was unfamiliar with the credit card machine. I recently saw the Seattle Times article regarding several staff walking out and subsequently being fired, which may explain the poor experience we had that night. Parking can be a bit challenging, with free curb-side parking limited and a paid parking lot available opposite the restaurant. However, the culinary delights that await inside make the search for parking well worth it.

I’m trying to find a nicer way to say this place is a waste of space, but… I’ve been thinking about it for months since originally going here and I still can’t come up with better. The only reason it gets two stars and not one is because it was clean and the food was edible; but I’d say this place is a sticky table away from being one star.
I won’t hold the slow service against them. It was clear to me when I had to wait a half hour for a table despite them having more than a half dozen open tables inside that they were understaffed which is frankly par for the course anymore when dining out since the beginning of the pandemic.
What really bothered me was the boring, simple menu which was clearly assembled based purely on which items were most lucrative. I’ve never seen a place so blatantly pick the lowest cost menu items, up charge them and not offer any substantial alternatives. Even worse, the food was mediocre at best. If I wanted to pay that much for mediocre tacos, I would go to a Mariners game. And how do you make bad nachos? I was just baffled this place called itself Mexican cuisine. I’ve had better Mexican cuisine at Dennys.
I know restaurants are a business but you’re supposed to provide some illusion of hospitality. I just felt like I was getting robbed the whole time. Even my drinks were filled to the brim with ice; I’m sure I could have fit the whole drink in two shot glasses sans ice. If you want to go some place for an overpriced beer and a vibe that can’t decide if it’s a nightclub or not, then this is your place. But I’d suggest you skip it.
It’s a real shame. The restaurant that was in this location before was fantastic. With any luck this place will be gone sooner than later but I’m guessing with it being in the heart of wine district that the winos will keep stumbling in, incapable of deciphering what’s a decent bite or not and keep this place in business.
