Dessert is, so often, relegated to the unfortunate role of an afterthought. Treated as a cliche, second-fiddle to savory courses, a half-baked gimmick or worse yet- simply abandoned to "safe" choices requiring the minimum amount of work. I say this as somebody often disappointed with the price I pay for sweet goods either in restaurants or bakeries. Personally, I feel that pie as a format is one most often poorly-treated (though this may be because it is my favorite genre of dessert, and my standards are higher). Bottom Line: If I'm going to indulge myself, it ought to be worth it.
Pie Bird is one of the few excellent establishments which is, because it is a truly local, modern business that elevates these culinary orphans often seen as too ordinary for the relative effort. I've enjoyed these pies on a number of occasions now, and I can confidently state that they neither suffer from a dearth of creative intrigue, nor do they feel a need to overcompensate by being as quirky as possible. They taste like the people who made them care.
They are humbly interesting. They have a curious personality behind them. They are unapologetically delicious.

On the contrary, the full scope of vision behind Pie Bird comes into clarity with a delightful yet minimalist interior and accessories such as coffee to complement and elevate the pie.
The passion curd pie I enjoyed on this occasion was unpretentious and well-executed, an enjoyable break from my day.
That is to say, the pie, whether sweet or savory, is still very much the point; it comes across as a decidedly human enterprise in an era where gentrification is the norm.

My kids ate the cutest little hand pie shaped like a heart with pink drizzle, on little pink stools with little pink water cups. The crust is incredible. So flaky and perfect. I also bought slices of the pecan, sour cherry and banana cream to go. All of them are absolutely perfect. Each component is so delicious and the flavors were really well balanced. I am so happy this place opened! I also showed up around 3pm and assumed they would be out of everything, but they still had every option which is amazing...
