We need good bagels in the area, so I hope this is constructive... the bagels were surprisingly not good, and others' photos show it isn't an inconsistency problem. Went on a busy weekend morning 8AM and got 3 bagels- plain, everything and cin/raisin. Very tight dense crumb, pale dull crust, more a dense bread ring than a bagel. Suggests under-proofing or not refrigerating dough overnight, or tossing them in to boil while still cold. Rooting for them to fix this.
Underproofing / Short Fermentation- The dough didnât get enough rise time. Could be due to cold dough going directly to boil, skipping the pre-boil bench rest, or insufficient yeast.
No or Short Cold Retardation. Overnight refrigeration develops flavor and structure. Skipping it often results in bland, tight bagels like this.
Boil Problems. Either unboiled (baked directly) or boiled briefly in non-malted water. The dull, bread-like surface suggests a dry bake, not the gelatinized crust of a true bagel.
Possible Flour / Hydration Error. If lower-protein flour was used, it canât trap gas effectively, compounding...

We got the "Lighten Up Francis" on an Everything Bagel and the "Bumm Burner" on an Onion Bagel. Both were cut in half and well wrapped. We each had half of each bagel. The Lighten Up Francis was the clear winner. It was tasty and totally hit the spot. The Bumm Burner was alright but the bottom half of the bagel was a little soggy. We ordered through GrubHub and it was about 18 minutes from pickup to delivery. If you're interested in ordering this, I would recommend eating in so you can enjoy right away. Also, the "home fries" in the description was actually one slice of potato lightly fried on each side. I was expecting mall cubes of potatoes but when I looked carefully at the picture I could see the potato slice. Perhaps they might consider calling it a breakfast potato?    Read moreThis was my very first time here and it was an impromptu visit for breakfast. I have never been in this strip mall and I was just curious. When I saw the Bagel shop, I knew that I had to stop in for a breakfast bagel and coffee. I was not disappointed! The young man at the counter was very pleasant and patient with me. I got a half dozen bagels, sliced and he made sure to tell me that my choice of jalapeño cheddar was more expensive than the others, and a sesame bagel with honey walnut cream cheese and a breakfast sandwich bagel with the most amazing bacon and last a coffee. My wait time was 15 minutes but they had a lot of customers as it was 11-11:15 a.m. and close to lunch time. Everything was fresh and the cost was in my opinion, exceptional. I recommend this shop highly for the bagels, but not so much for the coffee. They had oat milk as requested but the coffee wasn't hot and it was meh! Nothing special at all. Just a luke warm...
