Tucson's newest gem!!! What a delight to discover this sweet little bakery on the eastern edge of historic Barrio Santa Rosa. We've been three times now. First we only tried the salt and honey focaccia and, wow! Great sourdough flavor and chew but with a really expansive rise so the crust is puffy and golden (this is so rare and wonderful). Went back for more two days later, then for our third visit on Sunday with food friends who were equally excited. The cardamom orange cinnamon roll was perfection--great icing, just the right amount of spice, not too sweet dough. Sourdough croissant was a discovery--great lamination on the outside and just a touch of rustic heartiness on the inside (again with that amazing sourdough chew); besides the focaccia this croissant will likely be the staple I come back for the most. Also, the butter is good, which really matters. The blueberry pie was also a winner--good quality fresh fruit and a hearty but flakey crust. If you like artisan baking, this is the spot, but don't let the understated vibe fool you--this is a very difficult level of quality to pull off and takes so much love and attention to detail. Simple is best in my book and it's so hard to execute because there's nothing to hide behind. Finally, the coffee at Rosebud is excellent and deserves more than a mention--smooth, perfectly pulled--not new-wave acidic and not old-school burnt. If coffee was the only thing on the menu, it would be worth the trip, but you get a double-header here. I almost hate to leave this review because the line is going to be bonkers here soon, but the owners, Harper and Haley, deserve for the rest of the city to know how special they are. Read moreI love to support small businesses & this review is meant to be constructive. The 4 star for food is because when I arrived Thursday, around 10:30am, they were almost sold out. ( The 2 items I did buy were delicious.) I understand they are a new business & it takes some time to figure things out. Since Tucson is in "slow season" I drove from 30 minutes away in hope of finding a selection of items to purchase along with finding parking. I drove around different streets in the area 2 times until I found parking. This bakery is a GEM & I'm hopeful with time the menu will expand & since they are open until 4pm that there will be enough quantity to choose from for those who arrive after the early morning rush. I appreciate that this is a sustainable business but for those of us who live in other parts of town & LOVE a handmade, artisanal bakery, we will drive to partake of your wonderful baked goods. Best of luck & I will give this business some time to develop & I will return in a few weeks with the hope that a larger quantity of items will be available for me to purchase. All the women there are calm and relaxed and enjoy what they are doing, no cranky people here… they care about quality and I was so happy to see her picking through the raw blueberries before washing and using them on the pastries.. quality is A+ and they are genuinely happy women here making wonderful treats and it comes through in the details.. the quiche was excellent, the crusts of the quiche and Burberry pie was flaky and buttery and not too crumbly.
