We celebrated Father’s Day at Eddie V’s Prime Seafood in Princeton this year, and I cannot speak highly enough about the incredible experience we had as a military family of four with two small children.
From start to finish, the evening was thoughtfully orchestrated, and the staff went above and beyond to make it feel truly special — especially Gina, our server.
Gina was absolutely phenomenal. She instantly understood the challenges of dining with little ones and took proactive steps that most restaurants overlook. She brought our children’s meals out quickly (a lifesaver for hungry toddlers!), along with snacks and even fun little games to keep them entertained. This allowed my husband and me to truly enjoy our meal — something that rarely happens when dining out with two young kids!
But she didn’t stop there. Gina actually took our boys on a brief, sweet tour of the restaurant — giving them a mini behind-the-scenes experience they’ll never forget, and giving us a rare moment to savor our food in peace. That kind of thoughtful, family-centered service is nearly impossible to find, and it made all the difference in the world.
To top it off, James the bartender, came over personally to wish my husband a Happy Father’s Day. He brought us celebratory champagne, which added such a classy and heartwarming touch to the evening.
As a military couple, moments like these — where we feel seen, appreciated, and celebrated — are deeply meaningful.
The food, as always, was outstanding — fresh seafood, perfectly prepared steaks, and decadent desserts. But it was the atmosphere and service that made this visit unforgettable.

The crab cakes were especially good but we did not like the (butter?) sauce they were on. I would have preferred them with some tarter sauce and cocktail sauce on the side. When I go again I will be sure to tell them no sauce (it is sitting in the sauce). But they used jumbo large pieces of crab. My mother got the lobster tails which she liked and they looked great. I got the fish (it was in a butter sauce with a tomato salad around it). It has a burnt butter flavor that I did not care for. My brother got a small fillet steak which he seemed to like. The salads were also wonderful but the soup was not very good and did not taste hot.
They were quick to clear the table but some items were cleared too quickly before we had a chance to finish or box up. They also did not have salt and pepper on the table and they removed the hot sauce before I was finished using it and without asking if I was done. Also, they did not keep bringing water when my glass was empty and only refilled it once (we were there for over 2 hours). This is absolutely the biggest thing that I did not like, I shouldn't have to keep asking for more water in a luxury restaurant.
I spent $700. for 3 people which is what I expected to spend. I gave a 20% tip - no alcohol, 4 courses with several sides and dessert for everyone. They gave me a lovely card and small appetizers for my birthday and an extra dessert at the end which was thoughtful. The manager came to our table to greet us too which is a lovely gesture for all restaurants (not just new). One thing we all noticed, there was a smokey scent that was unpleasant (it was around the lobby and inside the main dining room).

Our server, Allison, was truly exceptional. She was attentive without being intrusive, incredibly knowledgeable about the menu, and had a wonderful way of making us feel both welcomed and genuinely cared for. Her recommendations were spot-on—especially when it came to the seafood specials and handcrafted cocktails. Allison brought a perfect blend of professionalism and personality that made our evening even more enjoyable.
We were also fortunate to meet Dylan, the Managing Partner, whose presence and leadership were clearly reflected in every corner of the restaurant. Dylan took the time to introduce himself and ensure everything exceeded our expectations. His passion for hospitality and commitment to excellence were apparent in the way his team operated—seamlessly, warmly, and with true attention to detail.
The food, as expected from Eddie V’s, was outstanding. From the pristine seafood to the expertly cooked steaks, every dish was a standout. What truly elevated the evening was the combination of world-class service and a team that genuinely takes pride in what they do.
