Next thing you know we were bowled over with a delicious eel dish, that saw us both promise one another, and the owner, that we were going to be back the next day. True to our word we did, however this time we over ordered and had to take some home.
SushiLab in Hanoi is truly something special. Every bite was a celebration of freshness to us and creativity, from the melt-in-your-mouth salmon and kingfish sashimi to the beautifully crafted nigiri, which was absolutely out of this world. Some of the local fusion dishes, even incorporating cheese, were surprisingly delightful — a perfect blend of innovation and tradition that just worked. That was a first for me.
One of the most memorable parts was the unique way the food arrived — freshly prepared upstairs and delicately lowered down through an upstairs window on a fine wire in a branded SushiLab box. It was quirky, fun, and somehow added even more charm to the whole dining experience.

The taste was outstanding, uniquely crafted (mainly with natural ingredients) and delicious without attempting to mimic conventional sashimi-style sushi. Even my omni companions were charmed by the vegan options and agreed they tasted good. Personally would recommend the rolls instead of the temari rice balls, as the rolls had more generous fillings and toppings. It would be great if the eatery could also have other combo sets available, since the menu featured an extensive selection of vegan rolls and I really wish I could have tried them all! Staff could speak English well, so I believe it may be possible to check with them on different dietary preferences such as customising allium-free dishes.
