Walking through the doors of the Niagara Falls Culinary Institute (NFCI) at SUNY Niagara, I was immediately struck by the energy and enthusiasm that permeates the halls. My guide, a member of the administration, began the tour by explaining the broad range of programs they offer, each designed to immerse students in the world of culinary arts, hospitality, and more.

Our first stop was the state-of-the-art teaching kitchens, where students in the Culinary Arts program were busy honing their skills. Watching them work, it was clear that this program is comprehensive and demanding. The students are trained in everything from basic knife skills to advanced culinary techniques, with an emphasis on hands-on learning. I was particularly impressed by the variety of cuisines they cover, ensuring that graduates are well-rounded and prepared for any culinary challenge.

Next, we visited the baking labs, where the sweet aroma of freshly baked bread filled the air. Here, students in the Baking and Pastry Arts program were working on intricate pastry designs and perfecting their chocolate tempering. The administration highlighted that this program is more than just baking—it’s an exploration of the science behind the craft, ensuring that students understand the why behind each technique. The course even includes advanced cake decoration, which was on full display as students carefully piped detailed designs onto multi-tiered cakes.

Moving on, we entered a classroom where students in the Hospitality Management program were engaged in a discussion about event planning. This program, I learned, provides a solid foundation in managing various aspects of the hospitality industry, from hotels to restaurants to event venues. The curriculum is designed to be both theoretical and practical, with students often gaining experience by managing real events or working in the student-operated restaurant, Savor.

Our tour then took us to a tasting room, where students in the Wine and Beverage Management program were learning about wine regions and pairing beverages with food. As I listened in, I realized how deep and specialized this program is, covering everything from mixology to managing a wine list. It’s perfect for anyone looking to become a sommelier or beverage manager.

One of the most unique offerings at NFCI, and a personal highlight of the tour, is their Ice Sculpture course. The administration was excited to share this with me, noting that it’s a rare and specialized skill that sets their students apart. I watched in awe as a student carved a block of ice into a stunning piece of art, using chainsaws and chisels with precision and care. This course teaches both the artistic and technical sides of ice sculpting, and it’s clear that students who take this course leave with a truly remarkable skill.

Throughout the tour, I couldn’t help but notice how well-equipped the facilities are. The kitchens, labs, and classrooms are designed to mimic real-world environments, giving students the practical experience they need. The administration pointed out that the institute also emphasizes farm-to-table practices, teaching students the importance of sourcing local ingredients and cooking sustainably—an essential lesson in today’s culinary world.

Before we wrapped up, my guide mentioned that students have opportunities to participate in internships, giving them a chance to apply their skills in top-tier restaurants and hotels. There are also various competitions and events that allow students to showcase their talents and network with industry professionals.

As we concluded the tour, I was left with a deep appreciation for the breadth and depth of the programs at NFCI. During the holidays the Institute displays a giant gingerbread house made by students with gingerbread and frosting. It is amazing to see....and smell, sweet ahhh. Saturdays during December you can experience events for the entire family with crafts, entertainment, all kinds of fun happening at the Institute. Outside on Old Falls Street the happenings continue with music, Santa visits, shopping, and s'mores being made around fire pits. Go inside the Institute to warm up. I heard the Buffalo Niagara Concert Band playing holiday tunes this past weekend. A train show is next Saturday. There's something different going on all through the holidays but the centerpiece is the gingerbread house. This year with a "reindeer games" house complete with dominoes, monopoly with NF street names and other childhood classics. It's a great backdrop for...

I am very happy that I strolled in to find a pastry cafe, a deli, a full service restaurant, a bookstore and a wine boutique awaiting my patronage. Ok, the school staffs the outlets with students, so customer service is rough. Two students were rapping extensively as I waited to order. After a polite wait, I interposed, "This will take but a moment". And I ordered.

I'm about to savor an arugula salad and a smoked salmon wrap for lunch, priced at an agreeable price. Culinary schools usually price gourmet food economically, and Niagara Falls makes...

Soo good!!! Amazing food, customer service, decor (cakes), accessibility and reasonable prices! I normally hate scones and Americanos but damnnnm best most delicious scones and coffee ever. Also had a ham & cheese bagel, attaching pictures, so beautiful and OMG delicious.
