We were strolling the Village and had read about A&M Pasta Lab and decided to stop in. WOW - we were pleased with what we saw and after speaking with Ally and Chef Michael, it was time to pick out dinner! The selections were great and Chef helped us plan the meal.
Chef Michael asked us a few questions about our preferences and when we advised we had not tried basil pesto before, he made a couple of suggestions.
We started with the pesto sauce, then he recommended agnolotti (stuffed with butternut squash) and then the cavatelli (small pasta shells). He added some ricotta cheese and we were ready!
Just to clarify, A&M Pasta Lab does not have cooked pastas available. They provide the sauces, pastas, sweets, juices, infused butters and accessories and you prepare the food at home. Chef Michael provides any information concerning the preparation and even writes the cooking time on each container - a real plus for us!
OK - the inevitable question is WHY stop at A&M Pasta Lab to grab dinner? This is not the pasta you grabbed off a grocery aisle or pulled out to defrost! This pasta is fresh, made onsite and has a light flavor and allows the filling or sauce to really complement it. Plus when's the last time you had the chance to work with the actual Chef to build a fresh pasta meal?
As noted on the pictures, our cooking time was very short and the outcome was excellent. Enjoying a glass of wine with the agnolotti (so sweet with the pesto & ricotta) while the cavatelli was cooking was so much fun and relaxing. The pesto was so fresh and went well with both pastas. The portions were perfect for the 2 of us and all this for $24.38.
We would highly recommend visiting A&M and speak to Chef Michael about planning a dinner. We love his way of stating with the sauce and going from there. And his passion shows as he assists you. And we'll never buy that frozen or canned "stuff" again.

Lightyears better than eating out and significantly cheaper than going out. Try it cause you will be amazed and happy! Cannolis are out of this world.

Incredible interactive experience. You get to see and select portioned sizes which is great for those looking to cook for a specific event or those scared of the size rack when buying clothes (me). After we picked what we wanted, the staff kindly explained the best way to prepare everything so it looks like I can cook. Didn’t know fresh pasta cooks in only a couple minutes.

Read moreWe are so lucky to have stumbled across this place. They opened on 10/2/24 and we walked in a couple days later. The owner is a chef and makes the pasta using flour from Italy. This is significant for those who have mild reaction to gluten. US flour has a bunch of unhealthy substances in it. I have always heard that those with mild gluten issues do not have the same issue in Italy because of the flour. My wife who normally has negative gluten reactions, did not have them after eating their pasta.
The pasta and sauces are amazing. The Tomato and Basil sauce was probably one of the best marinara sauces I have ever had. We tried the Campanella pasta which was delicious.
