After several missed opportunities, I finally got to try Cô Huệ’s bún ốc today. As a big fan of snail noodle soup who has tried many great places around Hanoi, I was genuinely impressed and excited about her dish.

I ordered a hot bowl of bún ốc with all the toppings. From the very first sip of the broth, I instantly rated it a 9.5—it was perfectly balanced, rich, and harmonized beautifully with the noodles, making each bite irresistibly satisfying. The broth was already well-balanced, so there was no need to add any extra seasoning. However, if you enjoy some heat, Cô Huệ has a delicious chili paste that you can add for an extra kick—just be careful not to overdo it, or the spiciness might overpower the broth’s exquisite flavors. Some people also add vinegar, but I found it unnecessary since the broth already has a subtle vinegar tang.

The next highlight was the three types of snails. The smallest ones, possibly ốc vặn (small mud snails) or ốc đá (rock snails), were surprisingly flavorful despite their tiny size—rich, creamy, and crunchy. The medium-sized ones were ốc mít (golden apple snails), while the largest were either ốc bươu or ốc nhồi (giant apple snails). These were all tender, slightly firm, and pleasantly crunchy, soaking up the flavors well without any unpleasant fishiness.

The snail sausage (chả ốc) was another standout—crispy, meaty, and packed with flavor. Some diners even asked to buy it separately, and the price was 300,000 VND per kilogram or 5,000 VND per piece.

I arrived right at the start of lunchtime, just as office workers from nearby companies rushed in. The narrow street quickly became crowded, with people queuing up, and the small eatery filled up fast, both indoors and on the sidewalk. Despite the crowd, the service moved quickly—I only had to wait about 10 minutes for my food. If you don’t want to wait in line, avoid coming between 11:30 AM and 12:30 PM. Visiting after this peak time would likely be less crowded. The shop is open from early morning until 3 PM.

Because of the heavy crowd and limited space, cleaning up promptly can be challenging. However, the owner remained cheerful despite the chaos, and one of the staff members taking orders was also quick and friendly.

I will definitely bring my mom back to enjoy the hot snail noodle soup, and in the summer, I look forward to trying the...

The display shows how well they organize. The flavor is light, a bit sour and sweet at the end. The snails are well prepared, I mostly like the snail paste “chả”, it’s so tasty with lemongrass infused. I added them to my bowl, it costs 5.000vnd each, they were so lovely when I ask for topping more tomato while I’m finishing half of my bowl 😅. Highly recommended if you are eager to try...

Sợi bún trắng ngần, mềm mại được xếp gọn gàng dưới lớp "topping" hấp dẫn. Điểm nhấn chính là những con ốc bươu ta tươi ngon, mình dày, được luộc chín tới, khêu ra còn giữ nguyên độ giòn sần sật đặc trưng. Nước dùng của quán Cô Huệ thì khỏi phải bàn cãi. Nó có màu vàng sánh tự nhiên, vị chua thanh dịu nhẹ của dấm bỗng, quyện cùng vị ngọt đậm đà của nước xương hầm và chút cay the ấm áp của ớt tươi. Nhìn những váng mỡ óng ánh trên bề mặt thôi đã đủ biết nước dùng được ninh kỹ lưỡng, đậm đà đến nhường nào. Điểm đặc biệt làm nên tên tuổi của bún ốc Cô Huệ chính là món chả ốc. Những miếng chả ốc vàng ruộm, thơm lừng được chiên giòn tan bên ngoài nhưng bên trong vẫn giữ được độ dai ngọt của thịt ốc xay nhuyễn. Cắn một miếng chả ốc, bạn sẽ cảm nhận được sự hòa quyện hoàn hảo giữa vị giòn rụm, vị béo ngậy và những miếng ốc sần sật đầy thú vị. Không chỉ có vậy, bát bún ốc nóng hổi của Cô Huệ còn được thêm chút cà chua đỏ tươi, hành lá xanh mướt thái nhỏ, vài cọng rau thơm dậy mùi. Tất cả hòa quyện tạo nên một bức tranh ẩm thực đầy màu sắc và hương vị. Khi thưởng thức, bạn gắp một đũa bún, kèm theo vài con ốc giòn tan, thêm miếng chả ốc béo ngậy, chan đẫm thứ nước dùng chua cay đậm đà. Vị ngọt tự nhiên của ốc, vị giòn sần sật, vị dai thơm của chả ốc, hòa cùng vị thanh mát của rau sống và vị cay nồng của ớt, tất cả bùng nổ trong miệng, đánh thức mọi giác quan.
