I highly recommend stilts - have already booked a table to return again for lunch in two weeks.
The twice cooked pork belly was our favourite. It tasted like it had a touch of aniseed almost, there was distinct sweet and liquorice-like flavour that enhanced the richness of the pork belly, adding depth and complexity to the dish - could not get enough of it!
The pacific oysters were live , fresh from the tank. Tasteful medium size. Given their temperature was tank temperature, we would have preferred them served on some crushed ice to sit for a few minutes to enhance their flavor and texture- but they were still sensational - a super smooth, creamy texture that was both rich and briny. The flavour profile was a harmonious balance of sweetness and saltiness, with subtle hints of the ocean.
The Ocean trout Ceviche style was perfection - the dill added a divine mild, herbaceous note.
The Moreton Bay bug pasta was nice and had a plenty of bug meat. I felt it had quite a strong “ocean” undertone and perhaps almost a bit hollow in flavour , however I always prefer a white champagne buttery sauce with a lobster pasta so that could just be my biased preference coming through.
We also had the eye fillet special which was a dry aged 4-5 marble score that was just mouth watering - a rich, nutty, and slightly umami flavour.
The Service was exceptional, all the staff we engaged with were warm and friendly and super attentive.

This marks my fourth visit to Stilts, and it never fails to impress. Each dish is impeccably paired with incredibly flavoursome sauces and condiments.
I ventured to try a few new items this time:
Marinated Tuna & Avocado Mousse Tartlets - The tuna is remarkably fresh, delivering a vibrant burst of citrus the moment it hits your mouth, perfectly complemented by a creamy avocado puree that balances the flavours beautifully. If you love anything ceviche - you could easily polish off this entree by yourself , comes as a set of 2 .
Wagyu Beef Skewer Bites - These skewers feature super tender wagyu, which melts in your mouth, finishing with a delightful buttery essence and a hint of flame-grilled goodness.
Lamb Rack - Absolutely divine! The combination of rich sauces with the juicy, tender lamb elevates this dish to another level. It's on the smaller side, being a cutlet, so I’d recommend ordering a side to accompany it.

We have dined at numerous Tassis Group restaurants in Brisbane, including Rich & Rare, Fatcow, Massimo, Opa, and Longwang. Our experience at Stilts was every bit as good and consistent as what we have enjoyed at all the other Tassis Group restaurants.
Rory welcomed us, and seated us at what would be one of the best tables in the restaurant, directly overlooking the new Kangaroo Point Bridge, and with an unobstructed view of the Story Bridge in the background.
Tony served us on the evening, and went to great length to provide detailed information about the menu, which features oysters, live lobsters, and Moreton Bay Bugs fresh from the tank.
We shared freshly shucked Boomer Bay oysters to start (along with a Sparkling Rose' and Margarita, as shown in one of the attached photos) followed by pan seared Canadian scallops with Morcilla, corn purée, and crispy leeks, then twice cooked pork belly with Celeriac purée, apple compote, and pan jus.
The wine list is interesting, and has several reds and whites that deliver great value for money.
The Pala Stellato Vermentino di Sardegna was an outstanding match for the all three of the dishes we shared during our anniversary dinner, and was well-priced.
Our intent was to share the Moreton Bay Buy linguine with Bug bisque, but since neither of us are big eaters, we decided the first three courses were plenty (call it "elegant sufficiency").

Read moreWe enjoyed the service at Stilts today in celebration of my husband‘s birthday. Whilst I read the reviews and saw that there was some disparaging remarks about service. I can certainly say that was not our experience. This restaurant has only been open for less than four weeks . And in that time we’ve had a tropical cyclone that turned into a rain depression come through causing them to close their doors for six days. All in all we had a really lovely experience. The food is exactly what you’d expect for the price. My husband is already planning on having the aged tbone upon our return - today he had the market fish and his only complaint was that the skin could have been crispier. The bone marrow was delicious. I had the bug linguine, the fresh bug was amazing and the broth for the linguine was outstanding. Husband sure did enjoy his complimentary birthday dessert.
The service and the level of engagement from the wait staff was more than you would expect - it is silver service without the pretension.
We had the great pleasure of having Katie be our waiter for most of our meal. She even came to say goodbye to us when we were sitting at the bar having after lunch drinks and to thank us for dining with them. If you want to feel like you’re a friend enjoying a meal at a particularly spectacular location then I highly recommend booking a table, spending the money, and enjoying a long afternoon at Stilts dining.
