Palazzo Salato has firmly established itself as a cornerstone of Italian dining, and after our most recent visit, it’s clear why this trattoria is ranked amongst our top five restaurants in Australia. From impeccable service to thoughtfully crafted dishes, every moment of our meal was a testament to the art of fine Italian dining.

Our experience at Palazzo Salato began with a warm welcome from Julie, whose attentiveness and charming hospitality set the tone for the evening. It’s rare to find service that is both polished and personable, but Julie made it look effortless. Her recommendations were spot on, guiding us through the menu with a genuine enthusiasm for each dish.

We began with Palazzo ham served with a zingy colatura hot sauce and freshly baked focaccia. The balance of salty, savory ham against the fiery heat of the sauce was an exciting start to the meal. The focaccia was pillowy soft, the perfect vessel for mopping up every drop of that spicy, umami-packed sauce. Next came the Pig’s Head Fritti paired with a refreshing watercress salad. Crispy, golden, and utterly indulgent, these fritters were a revelation. The tender meat inside was rich and full of flavour, while the watercress salad added a peppery bite that cut through the richness, making for a satisfying contrast. The Ricotta Gnocchi with escargot, garlic, and parsley was a showstopper. The gnocchi itself was impossibly light and delicate and the escargot was cooked to perfection, offering a delicate earthiness that complemented the fresh, bright notes of garlic and parsley. Every bite was a harmonious celebration of flavours, each element playing its part without overpowering the others.

For dessert, we enjoyed a Clafoutis that was a sweet, comforting end to the meal. The dish was elegantly simple, warm, custardy, and filled with just the right amount of sweetness. It was the kind of dessert that lingers long after the last bite, leaving you both satisfied and wishing for just one more spoonful.To wash it all down, we opted for a bottle of Ruge Prosecco, a lively and effervescent choice that paired wonderfully with the variety of dishes.

In all, Palazzo Salato is the kind of restaurant that makes you appreciate the beauty of simplicity done right. Each dish was crafted with care and attention to detail, and the service, led by Julie, was warm, welcoming, and attentive. I came here with my girlfriend for my birthday and we ordered the $120pp dinner tasting menu. The dishes were fantastic, and the service was some of the best I’ve experienced in a long time.

The anchovies on the bufala were a bit overly salty, but that could just be because I’m not very good with salty foods 😅. The marron was perfectly cooked and the meat came off the shell very easily. The sauce was super creamy, and the hint of yuzu really helped enhance the overall umami flavor of the dish. The crab malfadine easily came in at number one, though. The sauce wasn’t overpowering, so we could taste the sweetness of the crab in every bite, and the spice level was just right. However, the steak was pretty mediocre. It was cooked somewhere between medium and well done, and the butter on top was a bit too much—it overpowered the flavor of the steak. The roasted potatoes were also a little too salty, and I had to scrape some of the salt off, but they were cooked perfectly. The dark chocolate tart was very, very rich. I can see how it would be a delight for chocolate lovers, but since I’m not a big fan of chocolate, it was a bit much for me. That said, when you eat it with the gelati, it’s a really good match.

This was actually the first time I’ve had a tasting menu where we felt full but still managed to finish all the dishes and were just left with dessert at the end. I thought the portion sizes were perfect for the two of us.

For me, the service really made the whole dining experience ten times better. Good waiters are hard to come by these days... Our waiter was very attentive—he asked us how we found each dish and double-checked that we had received everything on the menu. I drink a lot of water, and the waiter made sure my glass was refilled as soon as I finished it.

Personally, I found the atmosphere a bit too dark. We had a small candle on our table, but I don’t think it was enough—I found it hard to see my girlfriend sitting across from me. ✨TLDR: 10/10 ambience and service, felt like i was transported outside of syd 💞 We were lucky and got a quiet ‘private’ area and it was perfect for a long dinner + catch up sesh with the girls ☕️

Food was good overall but maybe my expectations were too high, the pastas were good but not WOW. BUT this will still be one of my go-tos because it was a great overall experience - will need to come back to try their other pastas! 🍝

Food pictured [🌟=must order]: ▫️Stracciatella ($26) [🌟] - my fav with bread (which was FREE✨) ▫️Palazzo Ham ($24) 😐 - would skip this, just bread and ham ▫️Marron alla griglia ($52) 👌 - portion was tiny tho for 2 pcs, it’s good but might not be worth considering the price 😅 —— ▫️Spaghetti alla chitarra, bottarga, egg yolk ($34) [🌟] - our favorite!
