We learned about this (famous) Cafe from a TV program and checked it out in an early afternoon on a weekday. Surprisingly there were so many customers. When we went inside the Cafe, there was no vacancy anymore. Out of curiosity about how good it is, we chose to waited for a few minutes to get a table by ourselves after some customers left. The waiters came over to clean the table and brought the menu as soon as we seated ourselves. Afterwards we had to be very patient to wait for making orders, wait for orders to come and wait for getting the bill to pay. We could see that the waiters/waitresses were very overwhelmed by the non-stop flow of customers and understood that they could not meet all customers expectations at the same time. The tables were never empty during our visit and new customers kept coming in. People who managed to sit down wanted to make orders; those who made orders wanted to have the foods and drinks served; those who finished everything also wanted to pay and leave. We stuck in the Cafe for quite some time after finishing our coffee and food, as the waiter(s) had absolutely no time to bring our bill, as if they did not care about getting paid. (There is no cashier either) There could have been a more modern and efficient way to manage the flow, but this is a traditional Cafe, so customers have to adapt to this traditional way. This is not a place for customers who want to have a quick bite and leave. This is more a place for customers who want to spend time sitting down with some nice coffee, reading newspapers (which are offered in the Cafe!), reading a book, writing a journal or so (as long as you do not worry about people waiting to get your table).

This Café is the place where Mozart used to have his coffee, and the waiter ( I remember his name is Goran), told me its the oldest café in Austria! As a touristic café, I went thinking I will not find a table or even if I find I will have a poor table with busy angry staff. However, the experience was completely the opposite, I had a nice table with view on the square and the staff were very lovely, especially Goran, and I noticed how they talk to all the tourists, they chat with all people nicely making everyone feels home, and they show genuine interest in people. Goran provided me with helpful new information about the café, and provided genuine care, him and another member staff (unfortunately didn't get the other staff name) they were very lovely, funny, cheerful, and made sure I get the nicest cake, and provided me details about each cake. I felt home and felt the warmth, and even before I left Goran gave me a gift from the Café, thank you very much Goran. I had a nice time, got useful new info, and laughed a lot. Unfortunately, it was my last day in Salzburg, but I will visit again for sure If I have another visit to Austria. The setup of the cafe is a probable reflection of the old city lifestyle that locals are used to. This crowded cafe is basically no frills, free seating and on fast pace into its service for daily commuters. A pastry counter was on the far side of the cafe and ordering begins once we are seated. Service was decent as staff plow through scores of tourists, locals and travelers that wanted to experience the famous cafe.
We ordered standard coffee with milk, coffee with whipped cream and of course, the almond milk. Food wise, baked ham & cheese omelette and Viennese breakfast that is made up of ham, salamis, cheese and pickles. The portion is good for two to share and simple enough to get yourself going for the day.
As for the food quality, it is decent if you are not bearing an extravagantly expectation. However given the nature of this historic rich cafe (probably why it is more pricey than usual), expectations can mislead and confuse us into wanting more that what the cafe...
