Consistent standard across locations (I visit Yuen Long one the most) although beef seemed slightly more fatty. Their beef is sliced thinner so meat is now chewy even if you cook at high heat. Their default soup base is quite flavorful and goes with the meat very well.

I went during dinner service so service seemed slow and slightly disorganized. In particular, intentional or otherwise, a few times they missed our orders of beef. Had more special flavors of Haagen Dazs ice cream.

They don't really implement their time limit policies in a sensible manner. Customers should not be dishing or ordering any more food once their time limit is up, but they should certainly be left alone to finish their food in peace without disturbance. Pressuring customers to leave whilst they are in the process of finishing their food is encouraging...
