The Michelin green star is truly for the sustainability not the flavor. Please don’t come if you are look for a good food trip.
So salty! The flavor is not balanced! And the service is rather arrogant.
The reviews seem to be fine on trip advisor and Google map. But unfortunately I am very very disappointed.
I have dined in more than 15 Michelin starred restaurants, including some 3 star and 2 star restaurants. I have never encountered any situation like this of many dishes being very salty.
After the first dish, I told the waiter to let the kitchen reduce the salty level. But many of the coming ones are still very salty. It is until the main course, the oyster mushroom, I can no longer bear it. Everything is salty from the mushroom to the sauce to the quinoa in the accompanying dish. I could barely finish the dish, and left most of it untouched. Here comes the drama. You know what the manager says? “We have already reduced the salty level after you told us. This is how we serve things.” No one can be more arrogant and disrespectful than this. Then I told them that I have dined in more than ten Michelin starred restaurants and such case has never happened. They seem to be more humble after that. They listened to my opinion on the desserts, on which I found to have obvious unbalance/technical problems.
Despite the salty problem, it is still far from a Michelin starred restaurant. Using fermented/ pickled veggies/fruits is alright, but when it comes to be the main part, it is not acceptable for my taste. The flavor is too invasive and strong, even if there is custard/cream. For example, one dish has custard on top, with soya sauce flavor, and marinated Brussels sprouts, chestnut. The combination of Brussels sprouts and chestnuts is nice, but the Brussels sprout is more like a pickled veggie. It is ok to have such things as a decoration on top of something, but they use it as the body part. Another dish, the main dessert, has similar problem. The combination of artichoke cream,apple, and ginger is good, but the apple it too sour that it became not balanced. I would reduce the amount of marinated sour apple, or use not only the marinated ones but also some fresh ones to increase the freshness and sweetness.
There are many more problems that I can say about their dishes. Some plates are just flat and in lack of interesting harmony of flavors and textures. The potato with lovage, has a strong lovage herbal taste, but other than that it is just a potato dish. The leek dish is really flat, they use seaweed spinach sauce and mushrooms as a topping of the leek, but the leek is still the strongest part and other flavors fail to cooperate with the leek. I can make grilled leek like this as well honestly.
The green star is literally just for the sustainability, not for the flavor. If you look for well-balanced flavor, texture, a symphony of food, never come here. They don’t seem to pursue a Michelin star on flavor.
They gave me a 15% off discount in the end but the price is still high. With around 140 euros you can have a decent Michelin starred meal in Paris. This is not even close to a Michelin recommendation restaurant.
But some parts of some dishes are nice. And they accommodate gluten free diet. The gluten free bread is one of the best gluten free bread I have ever had. And the accompanying onion soup is nice(although a little salty, too much soya sauce). The appetizer snacks are well balanced and even a little surprising. The potato pound cake part is not bad. I have never tasted the lovage herb before. The ice cream in the pre dessert is nice(although the gluten free version of pumpkin dumpling is a failure, whose skin is too hard and dry. I make gluten free desserts and I know it can be much better than this). The artichoke cream combined with a little sour apple and ginger oil is nice. Read moreMy husband and I just had dinner tonight at Ark for just over 3 hours. It was the worst experience we’ve ever had and not worth the price or Michelin rating. The service was very slow— we assume to justify the price tag. The servers (aside from one) were rude. I commented how I loved the smell of pine needles in one dish, and I was met with “it’s not pine, it’s juniper” in a pretentious tone. The non-alcoholic pairing cost the same as the alcoholic one. The drink pairing contained half of the flavor. Without the pairing, we feel it would have tasted incomplete.
To run through the evening, we showed up about 15 minutes before our reservation at 6pm. You sit down and are asked for still or sparkling. That was 40,00 per person for sparkling that sat on the table for over 3 hours and was warm. Why not come by with fresh water to fill our glasses?
The food was fine. We are both vegan & have traveled extensively and this was the worst. There are better options in Copenhagen. Please do your research.
The booking said it would be until 8:30pm — we assumed that was the maximum amount of time if we ate slowly. It went well over that & we had to ask for the bill.
We had lunch booked for their sister restaurant Beyla for tomorrow. At the table I cancelled it. We cannot support them.
I’ve never written a negative review before. Usually I move on as what is this review even doing? Going back, there were reviews that aligned with our evening that were missed by us on here. Ark should not be in the top restaurants in the city.

We had the marvellous Domaine Matassa Olla Blanc, a wine that pairs beautifully with the food on offer, enhancing its nuanced flavors with its crisp, mineral undertones.
