Firstly, to get the good things out of the way, the ambience is nice and the decor is beautiful. Service is also friendly, prompt, and attentive. However, that is about all this location impressed us with.
We are from LA, and we came to Vækst after finding it on the Michelin Guide, and seeing how well it is reviewed. I’m unsure if this is just a difference in tastebuds or culture, but we were extremely underwhelmed with pretty much every dish. We got various courses with the set menu and I will unpack each of them below.
Potato Cream Cup: This was good. Nothing amazing, but it has a nice robust flavor from the cream and tomato powder.
Deconstructed Salad: It was just a leaf of lettuce with a mint and pea chutney-style sauce. Nothing innovative about this and it fell flat for us.
Bread: The bread was stale and took force to be able to cut or ripped apart. Like how do you mess up a roll??
Salted Halibut: This was one of the better courses we had. The fish was served with diced pear, a horseradish sauce, and a mussel broth, that all worked nicely with each other.
Beef tartare: This was fine. Texturally I thought the crispy rye was a bit too crunchy and hard on the teeth with the soft beef.
Mushroom Soup: This mushroom soup looked extremely promising, however it ended up being the worst dish of the night. It tasted like a fan of cream of mushroom soup, which had been salted to the point of being inedible. (And we are all ethnic people from America who eat quite salty!) No one in the party finished this, and when we asked the waitress, she said she agrees that the soup is too salty. No sorry, nothing. Not sure if this has not been communicated to the chef, or if they refuse to take advice, but this course was inedible.
Plaice: This dish was good, but nothing great. The fish needed a knife to be cut and was tough. The cream sauce was nice with the burst of ikura. The wilted lettuce was fine, but the sauce that came with it was quite nice. Nothing to write home about.
Tenderloin: The tenderloin was nice. The medium rare leaned much more towards rare, but we did not mind. The sauce with mushroom was nice, and paired with the Hokkaido squad, it went nicely.
Apple Sorbet: This was one of the better courses as well. The apple sorbet was light and refreshing with notes of lime. Textures and flavors worked well together.
Three cheese dessert: The cheeses were okay but nothing unique. No interesting flavor combinations, and all generic (but good) cheeses you could find at a farmer’s market.

I'm vegan + Medical Medium + gluten-free and mostly fat-free.
My way of eating can be hard to maintain while eating out. I booked online and wrote in the comment section:
“1 person is vegan and gluten-free. Is it possible to adapt the green menu to vegan and gluten-free (and soy-free) without too much corn and chickpeas? Please contact me if you have any questions regarding the above.”
Soon after the reservation was confirmed, and the restaurant assured me that they could accommodate my special diet.
Vækst absolutely nailed it with my menu 🤩 The chef altered the 3-course “Green dinner menu” and the 3 surprise in-between appetizers to be vegan, gluten-free, soy-free, corn-free, and low on oil 🙌🏻💚
All 6 dishes plus the 3 juices in the paired juice menu were amazing and qualify for 5 stars ⭐⭐⭐⭐⭐

Appetizer: Roasted celeriac with truffle cream and cress served with a yuzu marinated apple slice
Starter: Long-baked tomatoes on cashew cream with chervil served with a crispy potato bite with soft mashed potato in the middle
Paired juice: Green Apple Ribena
Surprise In-between appetizer: Green apple, cucumber, and cress on mild chervil oil with just a hint of oil
Main Cours: Roasted Hokkaido with Chanterelles mushrooms & lingonberries on deep/strong-tasting Hokkaido cream and walnut "snow"
Paired juice: Lingonberries Juice with a hint of Thyme
Dessert: Apple Sorbet on a vegan white chocolate airy cream with Chamomile and Hazelnuts
Paired Juice: Blueberry with a hint of almond
Final Suprise Appetizer: Vegan Chocolate Truffles
The staff was very kind and helpful - at our service but not on our toes - just as I prefer it 🙂
The vibe is rustic yet cozy.
My family eats a standard “meat and dairy”-diet, and we all love Vækst and agree that all dishes are amazing - This is our new favorite restaurant 🤩💚

I'd heard a lot about Vaekst prior to booking a green evening experience for my wife and I, to celebrate her birthday a few months ago. We arrived at 6pm for a reservation for the same time, but found the line out the door. As such, we managed to get seated only by 6.15.
First drinks were served - a fantastic cremant from the Bourgogne region, and the food started to arrive. The pear and yuzu combination was alright, and the kohlrabi/potato amouse bouche was outstanding - could easily eat 10 of those on the regular. Loved the rosé served along with the tomato, tarragon and danish waffle appetizer, which was the dish of the night.
The potato/cucumber salad and the pumpkin + fried oyster mushroom main were so-so - could have had a bit more flavor cutting through - though the posca bianca wine pairing was lovely. I'm docking a star from the food rating only because the mains weren't very impressive.
We ended on a spectacular dessert of apple sorbet and a hazelnut crumble, with a very nice dessert wine as well.
Service wise, we had an excellent experience throughout but the last twenty minutes or so left a bit of a sour taste in our mouth. We were seated 15 mins after our scheduled reservation was due to begin, but started to get rushed out for the table to turn by 8.05pm or so. This is clearly a management problem - we should have been informed about the two hour rule from the very beginning so we could have planned for it, but with the fair bit of wine being served throughout the dinner and the price you're paying for it, this strict timeframe seems a bit unjustified.
Speaking of the price, it was definitely on the higher side for the ingredients used. If you're charging the same amount for the vegetarian and meat options, you'd expect the quality of the veggie options to be better - or at the very least, the price to be lower.
