One of the best meals of my life tonight at Komatsubaki. The staff is warm and welcoming, the space is cozy, and the food is just out of this world. It's also extremely accessible. They will walk you through anything you need help with, including choosing a menu (kaiseki or sushi), what to drink (they have sake, wine, beer, and non-alcoholic options), and they briefly explain each dish and how to eat it for maximum enjoyment. I got the sushi omakase (I ate with 8 other diners at the bar and I think we all ordered the sushi omakase), and each dish was wonderful. There were a few traditional Japanese kaiseiki dishes to open, sashimi, white miso soup, and about 8-10 sushi courses, each in quick succession, then dessert and tea. The special of the night was lobster with eggplant, mushroom, and miso cream that was probably the most luxurious thing I've ever eaten. When I die, embalm me in that cream, s'il vous plait. Impossible to choose favorites but some other standouts were the "changing of the seasons" dish which had about 5 or 6 different elements, all delicious, including a fermented soybean and candied sardine thing that blew my socks off, the clam sushi with hot salt, and one of the opening courses which had a bite of Japanese turnip that Im gonna be thinking about for quite a while. I drank sake through the whole meal and it was subtle, floral, and delicious.
Thay say the meal takes two hours and they mean it. We started on the dot at 7pm, and as I was taking my last sip of green tea I looked at my watch and it was literally 3 seconds to 9pm. Left feeling well fed but not stuffed and with plenty of energy to walk around Paris for a few hours and grab a few drinks.The staff speaks French, English, and Japanese (at least) and delighted in serving us. Read moreA sensational omakase experience that certainly ranks amongst my personal favourites—their Michelin star is well-deserved. Chef Takubo's culinary skill speaks for itself, all you need to do is sit down at his sushi bar and enjoy the experience. We opted for the sushi menu and it did not disappoint; every bite was perfectly executed, and this is coming from someone who is exceptionally picky. The sushi rice was impeccably seasoned and the knife skills of each chef were mesmerizing. Every cut of fish was fresh and excellent, and every course was very thoughtfully presented and paced very well. Although it's nearly impossible to pick favourites, I have to give special mention to the otoro nigiri, sashimi course, and the hassun course. My only note is that I would probably skip the lobster next time; it was a little too heavy for me, although it was still delicious.
In order to get the best experience, it's an absolute necessity to sit at the bar. Both chefs were kind and funny! We thoroughly enjoyed our interactions with them. It's fascinating to be able to watch these chefs prepare a plethora of dishes with such casual synchronicity and effortless perfection. I came here for my birthday dinner and the entire bar sang happy birthday to me while I was presented with a surprise dessert. Every bite is a fusion of Ingredients sometimes few like n the fat tuna sashimi and sometimes many like in the wagyu stew. I have been surprised to see the use of bottarga within some of these Japanese delicatesse ( dashi with grilled white fish) or the use of tartufo on some suhsi, but it did match. By choosing the menu which I strongly recommend, you will enjoy several entries that will leave you breathless. Also the desserts were extremely balanced.
