We visited Akrame on a Thursday evening. The restaurant is a bit hard to find because it is down a small alley and there was no signage that we could see. The restaurant is quite small and very intimate and cozy. I have never been in a restaurant with such a high ratio of wait-staff to patrons before and the service is really superb. Many of the items were assembled at table-side which added to the 'experience'. There is no menu, just, "The Experience." I do not know how often the menu changes, but our waiter kept telling us that the next item would be a surprise... And I was like, "It is all a surprise!" But maybe it is less surprising if you're able to go there regularly. During the meal, we had fresh, crusty sourdough bread with two flavors of excellent home made butter. I won't go over the entire meal, but a few highlights - the Egg. This was one of the appetizers, the egg itself was perfect, but the real star was the broth which was like the penultimate dream of chicken soup. The John Dory cheek. This was presented by the Chef himself, and it was sublime. One of the very best instances of cooked fish I've ever had. We had sweetbreads for a main course. They were presented with a beef reduction topped with orange, with tahini and fresh herbs on the side. The meat was tender and moist without the weird spongy texture that you sometimes find with sweetbreads. However what really made this dish spectacular was the reduction and the fresh spices. In particular, the fresh mint. All of the desserts were standouts. The Chef's signature dessert of custard with a chocolate crumbles was a high point as well as the cubes, presented on an actual granite stone, filled with chocolate and Grand Marnier. The one discordant note was the scallops with seaweed consomme. The dish was presented with a raw, thinly sliced scallop which was married with hit seaweed consomme at the table. Unfortunately the consomme was not hot enough to actually overcome the coldness of the bowl, so the dish ended up being luke warm. The consomme had an excellent flavor, like the essence of shellfish with notes of seaweed, but it was brought down by the coldness and texture of the scallop. Overall I thought this restaurant was fabulous. The wait-staff was amazing and the food was excellent with many novel combinations. If we come back to Paris, I hope to eat here again.

we went here for my birthday looking for a special meal in Paris, and it didn't disappoint at all. We went for the full menu, which actually might have been a bit too much food. The regular tasting menu would probably be fine. Most dishes are relatively simple, they focus on some flavours, but they were all extremely well prepared and tasty. My two favourites were the cod with trout caviar, and the pigeon. Those two were incredible. They also had a bunch of veggie dishes that I enjoyed a lot. The balance between veggies, fish and meat was quite interesting, as these in some fine dining restaurants they skew towards the strong flavours of meat, but it wasn't the case here. Desserts were quite good as well. I really liked the chocolate mousse. Service was very attentive. Some of the waiters struggled a bit with english, but they tried hard to explain us everything, which was very appreciated. The wine menu was relatively exotic, at least for my limited knowledge of french wines, but that's probably more on me than anything. All in all a great experience. It is very expensive, but I guess Paris + 1 Star is just going to be like that.

Wow. A great dinner. Nice ambience , great interior design, choice of perfume, and art works by Daniel Arsham. Each dish was a surprise. The timing was just right too. Now on to the dishes I enjoyed. The smoked butter was enchanting. The other two dishes were The turbot fish with passion fruit cream/ vin jaune sauce and veal neck. What was most enjoyable is the mix of sauces. What i thought wasnt that well wax the caviar, It was a bit too salty; and the fish dishes which tasted bland compared to others. There were three desert , each one was again a surprise. My favourite was the second to last once, the chili pepper yogurt. Overall strongly recommend.

Wow. A great dinner. Nice ambience , great interior design, choice of perfume, and art works by Daniel Arsham. Each dish was a surprise. The timing was just right too. Now on to the dishes I enjoyed. #79 in my Parisian Michelin Marathon. A « gourmande «  expérience.

So what’s interesting here ? A quick context : the chef used to have 2 stars in another address. That’s interesting because you can see the two stars level in some part of your meal. Especially the service, with a lot of details, like the fact that the dishes preparations are finalized in front of you. He’s from the south, so there’s no way you’re leaving the table hungry (or even remotely so!). But that’s anecdotal, the interesting part is that there’s a focus on the experience. You don’t come here just to eat, you come here to enter the chef universe. He use his exotic roots but it’s not the main theme. He’s just enjoying. Bottom line, we had a great Friday lunch, the service brought life and entertainment to our conversation and experience. The crowd was business and friends. The atmosphere was quite relaxed for a one star. Please note that there’s a chef table at the entrance, or you even have seats at the counter for a more immersive experience. I’ll try those next time. It’s a very solid one star. I’ll most certainly come back.

Update Dec 2022: and I went back… but I forget to book the chef’s table. How could I update the review? I think his focus it’s pleasure and beauty. The result is that it’s an experience in term of taste, but also for the show, the design. I really need to come an evening to have the full experience, but, dear readers, I think it’s safe to say that you’ll have a great night. At least, on both occasions, my guests had.

Gelukkig een plaatsje kunnen reserveren bij Akrame. Dan denk je dat je het zo gevonden hebt maar dat viel toch even vies tegen, we hadden namelijk het huisnummer niet opgeschreven. Aan de straatzijde geen markeringen. Gelukkig had Lies op een foto een paard in de gang zien staan, dit was ons herkenningspunt. Het leek erop dat je een museum binnen loopt, op het eind kom je in de tuin en vanaf hier is het logo van het restaurant zichtbaar. We werden begeleid naar een ronde tafel, met uitzicht op de keuken, aan het raam, fijn. Je kwam langs de open keuken in een donkere ruimte die zeer modern is ingericht. Het lange smalle restaurant met aan een zijde een lange glasgevel is modern ingericht. Grijze ongedekte tafelbladen en lederen kuipstoelen met prima pasvorm. De linnen servetten werden uitgeserveerd. In het plafond is een kunstwerk verwerkt van een vallende man, mooi.

Als aperitief een witte wijn. We mochten kiezen van de beperkte kaart met serieuze wijnen tegen hoge prijzen. Het werd een Oostenrijkse Grüner Veltliner van het huis Gobelsburg, geschonken een een speciaal glas van Zieher, die erg goed beviel. Het eerste hapje werd uitgeserveerd door een charmante jongedame. Een blokje watermeloen gedrenkt in pastis, erg lekker. De menu keuzes werden uitgelegd, meteen werd duidelijk dat allen het drie gangen menu (exclusief verkrijgbaar tijdens de lunch) voordelig geprijsd is. Een gang extra kost al gelijk het dubbele. De keuze was makkelijk.

Verder met het tweede hapje, een tarteletje met een romige vulling afgedekt met een gelei van limoen, heel verfijnd met mooie textuur. Gevolgd met een krokantje van aardappel met erop een stukje gerookte paling, heerlijk!

De boter werd uitgeserveerd, hier werd een showtje van gemaakt, leuk. Opgeklopte roomboter met een speciaal smaakje, eentje met limoen en de andere met koffie en zeezout. Geen uitbundige smaken maar verfijnde smaakaccenten. Erbij twee sneetjes krokant gebakken zuurdesembrood.

De amuse werd door chef Benallal Akrame uitgeserveerd. Een hele moderne presentatie. Als basis scheermesjes in een crème van knoflook, afgedekt met een vel van gereduceerde melk waarop gepofte amaranth en een sausje waarin limoen. Hele delicate smaakjes en een prima textuur, toppie. (9,7)

De eerste gang was vis, ik dacht zeetongfilets, overgoten met een wit sausje, keurig gepresenteerd op een zwart bord. Eronder een brunoise van gerookte palmhart met structuren van spinazie, ernaast nog twee “chips” van meloeskes. De kunst van het weglaten wordt hier gedemonstreerd. Het lijk simpel maar het resultaat was verbluffend, heerlijk! De Grüner Veltliner sloot naadloos aan.(9,8)

Bij het vlees wilde ik een rode wijn. Er stonden er slechts twee op de kaart, beide indrukwekkend en ik mocht ze proeven om de juiste keuze te bepalen, wat een service. Het werd de Côte-Rôtie 2014 van Yves Lafoy, Syrah op zijn elegantst, mooi hoog in zijn zuren, heerlijk. Uit de keuken een perfect gegaarde duivenborstfilet op een bedje van girolles in een heerlijke geconcentreerde en plakkende saus (in de stijl van chef Wollerich). Ernaast een schaaltje met een complex groentegarnituur, heel verfijnd met subtiele bite. Top bereidingen en prima smaken waarnaast de heerlijke Syrah uitstekend in balans was, hij vulde het gerecht aan met zijn mooie zuren. Voor beide de topper van de middag. (9,85)

Als afsluiter een speciale espresso, mooi hoog in zijn zuren maar heel bescheiden in zijn bitters. Ernaast een lekker Madeleine en een tablet chocolade om mee naar huis te nemen.

Bediening was uitstekend verzorgd, correct met gezelligheid, gepaste humor en entertainment.

Prijs-kwaliteitverhouding van het lunchmenu was uitstekend. De wijnen per glas zijn serieus geprijsd, per fles vallen ze mee.

Akrame is een restaurant voor liefhebbers en die zijn er in Parijs ruim voldoende, er was zelfs een koppel dat in de tuin ging eten.
