As promised, I returned to Restaurant H, and what a difference a year makes! Because I have delusions of grandeur, there's a part of me that says the management of Restaurant H read my review and altered the personality of the restaurant. Whatever the cause, Restaurant H is now friendly, warm, engaging, and the food is even better. Restaurant H is deserving of two or three stars at this point.
Jean-Philippe has taken over the role as sommelier and captain at Restaurant H, and his charisma and charm permeate the room. It is like night and day from the last time we dined at Restaurant H.
The food. The food. The food. This chef needs to hire a public relations team, because his culinary skill is on par with the masters of French cuisine. Hey, I have been dining at great restaurants for decades. It isn't fun getting old in the least, but age does provide a great foundation for evaluative analysis. I know restaurants! Restaurant H is one of the best in Paris.
This was the set menu: Amuse-bouche: Lemon and trout eggs tartelette, Greek yogurt and smoked eel cracker and potato crisps with beets ketchup. Entrée 1: Spinach reduction, cèpe cream and praliné; green coffee roasted cèpe. Entrée 2: Sea scallops confit in beurre noisette, céleri purée and fried celeri; brown butter jus. Poisson: Line caught cod ballotine cooked low temperature, Jerusalem artichoke purée and crisps, bouillon shrimps and flamed Jerusalem artichoke. Trou normand: Granny Smith apple sorbet, Ardberg 10years foam. Viande: Black onyx beef filet cooked by the barbecue, sweet onion cream, burnt bread crumble and meat jus. Pré dessert: Marinated grapes with vermouth, bernache sorbet, grape skin and white grape siphon. Dessert: Madagascar vanilla mousse, confit lemon, kalamansi sorbet and " gâteau feuilleté
It was incredible. This, for 90 Euros per person. Are you kidding me!!! The scallops and cod were divine, and I don't use that word! When it Paris, you must dine at Restaurant H. Listen to me.
At the end of our meal, Jean-Philippe asked if we want to meet the chef. I was astonished. This was the chef who was so distant the last time. Every table was brought up to the open window to meet the artist creating this incredible food. What a difference...

When searching for a michelin starred restaurant in Paris you are definitely spoiled like no other city. However, if you can, choose this place! Fron the moment the maitre de saw us from across the street approaching we were greeting with such a warm welcome. The restaurant itself is small and intimate, only 8 tables I counted. This added to the atmosphere and ambience as if everyone eating there was sharing in the experience. The vibe is relaxed and both maitre de's were excellent at explaining each course and having a chat.
We chose the 7 course menu, which actually turned out to be 11 plates in total! We didn't go for the wine pairing but had champagne, white wine and then a dessert wine. All were declious but the white wine was so light in flavour I could have drunk it all night!
Other have pit up pictures of the food here so I'll not do the same but when asked by the chef which was the best course we could not choose. From the razor clams to the jersey beef and everything in between it was delicious. The flavours were simply incredible. We have eaten at other michelin starred restaurants and this was at the top if not better. I expect a 2nd star soon!
As I mentioned, we thanked the chef at the end. His and all the staff's English were brilliant. We took some photos outside when leaving and the chef must've seen us as he ran out and asked if we wanted a photo with him too, he got another member of staff to take the photo. I thought this was especially kind and thoughtful as by this stage he had a full restaurant to attend to!

I ve reached a point where I can see the personality of the chef through his/her cuisine. I’m not the only one, one can experience this strange feeling after suffisant number of étoilé. Actually, it’s one of the criteria of the inspector when judging the restaurant: personality of the chef in his cuisine. Well, I like this guy. And his personality influenced the team, and I like the team. I did not have the chance to meet him, but I like him. His cuisine is playful, humble and yet smart. The waiter we had was happy to be there (knowing French waiters, it’s a differentiator), and proud of the craft. You can feel a good vibe. The restaurant is small, you feel at ease. It’s perfect for couples, friends. I had a friendly professional meal, it was perfect. Dress code / vibe: You’ll feel younger there. I’ll go for designer t shirt. We’re near Bastille, it’s the révolution! Does deserve its star Experience: I had a good time. And now, going through the pictures, I think I want to go back with my darling for a nice relax dinner. 2022 Update : I did go back (but with a friend). Well, it was even better than the first time.
