#29 cf Michelin Stars Challenge public list Witness a Sushi-ya priest perform a Sushi mass.

You come here to witness some devoted to his art perform his rituals and spread gastronomic joy to some happy few. Interestingly Michelin is wrong. It’s not 7 seats but 8, plus 3-4 at the bar. Still, it is tiny and you want to seat at the main counter, in front of the Chef. Because this is what you’re here for: to see a master at work. To be hypnotized by his craft. And then, at the end of each scene, the master will dispose his offering in front of you. This is truly centered around the craft and the experience. You can see it as a fascinating movie where each scene drags you to the next in awe. The service is there not to distract you from this experience. Having the good fortune to have traveled in Japan, even by Japanese standards, you’re in a top tiers Sushi-ya. By the way, if you go to the bathroom (and you have to!), you’ll wonder if you did not take a JAL red eye flight, and arrived in Tokyo (cf last picture). This is perfect for those who are Japanese Sushi fan. You’re in for a treat. If you just want a one star, you’ll find it quite expensive compared to the others one top star. Basically you can go to l orangerie George 5 for the same price. Also, if you want to have an private conversation with your date or business partner, this may not be the right place for you, as you’re very close to each other. For instance, I knew the business life of someone at the other side of the room. No, you’re here for the Sushi and to witness the chef craft and ritual. So it’s great for couples who want to witness this experience together for example. I went alone. Honestly, it was perfect. I could really focus and enjoy. I’ll come back with my darling, but a day we don’t have big subjects to discuss, and day where we want to be taken away in Tokyo

Top tiers one star for the sushi An experience that you’ll remember and think about Dress code: Nothing particular, but you want to honor the chef talent and work, I’ll up my game a little bit.

Update 2022: Back after one year. The good thing is that you’ll have some changes (the pictures and videos are already online but not directly under this review due to some limitations …). When I went back we were 7, so as mentioned, very “happy few”. The level was pretty much the same as last year. Nothing to say about this. Compare to some others Sushi ya, the pricing is quite decent.

There’s one design issue. Last year already, I did noticed that one party was a bit louder and could trouble your experience. But I assumed it was due to those persons. This time I had the same experience and realized that it was due to the design of the room (mirrors and windows reflect sound) and the lack of sound absorbers. It’s nothing major, especially since most of the crowd is international, but if you want to be in a quiet place where no one hears you, it could be an issue. They put a little bit of classical music to cover it anyway. Most likely I will be fixed by the time you read this.

The restaurant has recently had a new chef (early 2022) and it is no longer at the previous level. In short, Sushi-B will not be able to keep its star, when it continues like this.

It is still a good but overpriced experience, but unfortunately I have to say that the sushi and the fish are of lower quality and watery. Simply no comparison to the previous sushi-b, it almost seems as if they cut corners to maximise profit.

The preparation of the non-sushi courses needs more control from the chef as quality varies. For example, in a dish made of three ingredients, one ingredient was missing in my case, while my neighbour had all three. This should not happen in a one-star restaurant, especially when only eight plates had to be prepared.

Some of the fish is over-seasoned (I don't mean wasabi), some is absolutely bland.

In an 8-seat sushi restaurant, you actually have an almost intimate situation, but when the chef almost doesn't interact with the guests, it creates a very distant atmosphere. Compared to the new chef, the previous chef was very reserved, Japanese, but he interacted with the guests very skilfully and subtle. A few words, a look and a gesture are enough to create a difference like night and day.

The apathy is also reflected in the food, it's there, it's not bad but it doesn't inspire.

On a side note the staff smoking in front of the restaurant including the chef lets you wonder if you can trust their tastebuds.

Would I come back and would I pay more? Hard no.

Une petite sonnette, comme le veut la tradition, et nous voici dans un restaurant magnifique, minimaliste, design et surtout confidentiel. Depuis la rue rien ne filtre. 8 places au comptoir sushi (toutes prises ce soir là et certainement tous les autres soirs) et 4 places au bar (mais vraiment pas intéressantes puisque vous tournez le dos au maitre sushi). L'endroit est intimidant, la culture japonaise est pour moi pleine de codes que je ne connais pas forcément et on a pas envie de faire quelque chose de mal. C'est pourquoi je n'ai osé prendre que deux photos de tout le repas, mais filez voir toutes celles de Dora car elles vous donneront un très bel aperçu.

Le service est irréprochable, souriant (peut-être un peu trop crispé le sourire), à la hauteur du lieu. Le chef étonnamment chaleureux et proche de ses clients, pas froid du tout comme j'aurai pu le penser (cliché bonjour).

Le soir trois menus disponibles. Le "Terre" sur réservation préalable, le "Soir" et le "Omakasé". Nous partons sur l'Omakasé qui comporte amuses bouches, trois entrées, deux plats, des sushis et deux desserts. C'est une évidence, avant ce soir là je n'avais jamais mangé japonais de ma vie. Et je crois que je me souviendrais très très longtemps de cette expérience fabuleuse.

Avec les amuses bouches je prends une liqueur de prune, c'est vraiment très doux et délicat, peut-être un peu trop sucré mais je chipote. Une petite douceur donc pour accompagner notamment du tofu de sésame grillé et wasabi. Wasabi que le chef fait lui même devant nous avec un mini pilon. Je ne me souviens plus de tous les noms des plats mais nous avons eu un tartare de turbot absolument magique et un tempura divin. Cependant ce n'est rien, absolument rien comparé à la troisième entrée. De la ventrèche de thon avec du caviar. Tout simplement. C'était émotionnellement très fort (oui je suis émotive, non je ne suis pas cinglée), j'en avais les larmes aux yeux devant l'excellence de ces deux produits qui s'assemblaient parfaitement ensemble. La dégustation de cette entrée, dont je me souviendrais toute ma vie, rentre à la 2ème place de mon panthéon personnel.

Après les plats viennent les nigiri sushi. Qu'ils sont petits, qu'ils sont délicats, c'est parfait. J'ai redécouvert la vie. Moi qui ne prends jamais de wasabi d'habitude ou de gingembre j'ai pu apprécier combien ces ingrédients, quand ils sont de qualité, sont bons. Le chef est un virtuose, la découpe de son poisson est hypnotique, lame en diagonale et hop dernier coup à la verticale. Majestueux. Et quelle fraicheur, quelle qualité. Je n'en attendais pas moins. Sushis à déguster avec les doigts pour ensuite s'essuyer sur la petite serviette humide pliée à cet effet. Parmi eux du bar, du chinchard, de l'encornet, de l'akami (le thon que nous connaissons chez les "jap"), du toro (la ventrèche si rare et fondante), de la sériole, de la langoustine avec son corail et j'en oublie sûrement. Un sushi réalisé parfaitement avec un peu de wasabi entre le riz (parfait) et le poisson puis le chef vient donner un léger coup de pinceau de sauce soja sur le poisson. Il faut juste ensuite prendre le sushi entre ses doigts, ouvrir la bouche, fermer les yeux et profiter de l'instant.

Ensuite les maki composés d'akami et de toro avec du poireau. Waouh, je suis restée bouche bée devant la technique du chef j'avais l'impression d'assister à un cours, en fait je veux prendre des cours ! Quand on voit ça, quand on mange ça je ne crois pas que l'on puisse remanger comme avant des maki ou des sushi. C'est impossible.

C'est déjà très copieux mais lorsque le chef nous demande si nous revoulons quelques sushis il est difficile de refuser une pareille offre. Je demande donc mes deux préférés l'encornet et la sériole. La découpe de l'encornet est d'une telle beauté ! Et la sériole était excellente grâce à son petit goût fumé. Je n'avais jamais mangé ni de l'un ni de l'autre et c'était parfait. Kekko deshita.
