If you want Neapolitan pizza, and I mean Neapolitan, youâve come to the right place. We were looking for traditional Neapolitan pizza in our neighborhood after having returned from Naples. They did an excellent job. You can tell they did their homework. The dough is soft and tender. The ingredients are balanced and complement each other rather than compete and over power. They get the simplicity right. The flavor is light. The portion size is correct ~13 inches. I was even impressed with the choice of plating! They use corrugated cardboard which preserves the heat while allowing the pizza to breathe. Porcelain kills the pizza by cooling it too quickly. The crust is like freshly baked bread. Perfect for swiping at the rogue tomato, or dripping sauce. The cooking time was about 90 seconds and in a hotter burning oven! I was checking my watch to see how close they adhere to Neapolitan standards. Iâm thoroughly impressed by their commitment and research of the technique and execution. The only minor difference in authenticity is the lack of cutlery to eat the pizza. But hey, thatâs what hands are for and it doesnât personally bother me. The point of cutlery is to prevent eating too many of the ingredients at once which can disrupt the balance of flavors. Otherwise, I just wish they had some Czech Pilsner or Peroni because that would make it perfect. 4/5 stars is near impeccable, but to be a 5/5 you have to be the best. For that, you need to get your pizza from Napoli! We will definitely be returning to this pizzeria to get a taste of Naples. Thank you very much. The service is excellent by the way.
