If you're a fan of hearty, delicious BBQ and a cozy, rustic atmosphere, Bison BBQ Bar in Dublin is an absolute must-visit. We had the pleasure of dining there recently, and every part of our experience exceeded expectations.
We opted for the combo plates, which were packed with mouth-watering sausages, juicy ribs, tender pulled pork, and perfectly cooked chicken. Every bite was superb, each meat was cooked to perfection, juicy, and bursting with flavor. The sauces served on the side complemented the meats wonderfully, taking the experience to another level. It’s clear that they take great pride in their BBQ, and it shows in every bite.
The beers on offer were a perfect match to the rich flavors of the BBQ. We thoroughly enjoyed a great selection that paired wonderfully with our meal, elevating the whole experience.
As for the sides, it was clear that a lot of care and attention went into them. The handmade elements were apparent in every dish, and it was a treat to have sides that were just as thoughtfully prepared as the main courses. Whether it was the tangy coleslaw, creamy mac and cheese, or crispy fries, everything was delicious and perfectly balanced. The ambience of Bison BBQ Bar added so much to our experience. The space is warm and welcoming, with a rustic charm. The exposed red brick walls and wooden tables created a cozy yet vibrant atmosphere that made us feel at home right away. It was the perfect setting to enjoy a laid-back meal.
And last but certainly not least, the service was magnificent. The staff were incredibly helpful and attentive, especially when it came to accommodating our kids. They went above and beyond to make sure our little ones were comfortable and happy throughout the meal. It’s not every day you experience such thoughtful and personalized service.

As I stated, your staff were nice. However, at the end of the meal we said that the meal was not as tasty as we expected and it went over her head. And we felt that it would not be appropriate to tell the new employee who only started that night. There was no obvious manager we could see. And I’m adding in now that we were rushed to pay our bill literately as we had finished our main meal as they had to settle up their till and she reached for wooden box with the sauces in was removed as I paid the bill. It just came across as, ‘I’m in a rush, pay now, ask is everything fine? Then not listen or be distracted and then go and sit with the other staff. It was what it was and it’s untrue to say our feedback was positive on the night. It just wasn’t heard… Check your cameras.

The beans had no taste and over done. There was no burnt ends even though I went digging for them. Really poor flavour.
Went for combo of ribs and pulled pork. Again, disappointed with the lack of flavour from the pulled port and how wet it was with no seasoning. The rib meat was tasty but it was a pigeon sized pig. All bone and little meat.
My son had mac n cheese - loved it. Burger had way too much sauce which overpowered the meat. It’s the size of a euro saver burger from McDonald’s.
Wife had chicken - it was bland. Chips over salted and a bit greasy.,
All I can say is that don’t believe Google reviews and we will not be coming back...

I remember when BBQ spots started popping up in Dublin, with Pitt Bros, My Meat Wagon, and BISON leading the charge. Each had their strong points; BISON was my go-to for brisket. Fast forward to the present, and it’s clear things have changed. Pitt Bros and MMW have kept up the pace, but BISON has sadly fallen behind.
Decided to give BISON another go while in town. We got seated quickly, which was a plus. However, it took 25 minutes for someone to acknowledge us, only to be told they’d be back in 5 minutes. Meanwhile, a couple who arrived after us got their drink order in before us. It took a full 30 minutes from sitting down to get our order taken, and another 30 for the food to arrive. The place wasn’t even busy.
Now, onto the food - and not in a good way. The brisket was so far off the mark, it was like thin slices of roast beef, served with watery gravy. The sausage was tough, and the less said about the ribs, the better. The coleslaw seemed worse than what you’d pick up in a supermarket.
My other half ordered a pulled pork burger, which turned out to be just chunks of pork on a bun that you had to pull apart yourself. Not exactly what you’d expect.
Honestly, I don’t know why I thought of giving this a 2/5 initially. It was easily one of the worst dining experiences I’ve had in ages, from the service to the food. I’m adjusting it to 1/5 because even the value for money was poor.
A real letdown from what BISON used to be. It looks like BISON’s best days are well behind it.
