We started with 3 bite-size complimentary starters first the exquisite Folie de Broccoli, featuring cerverie leek powder and fresh truffle, which exploded with flavor in every bite. Second, The Memory of a Tuscan Falafel, made with chickpeas and lentil flour, fried to perfection, and served with ponzu mayo and beetroot powder, was another standout starter. Third, The Salty Marshmallow with chia seeds and ginger gel was a unique and delightful treat.
For an appetizer, we enjoyed perfectly cooked asparagus, presented in three distinct ways, showcasing the vegetable's versatility.
The Pecci, with its dark noodles and rich spices, was exceptionally flavorful. The risotto with beef cheeks and peas was another highlight, offering a perfect balance of taste and texture.

We stayed in the Town for two nights and went there twice, while having the chance to dine there on just two occassions being the only bad thing about our visit. Actually, compared to other restaurants, I'm saddended that I can only give them 5 Stars, since they would deserve 10 at least. In other words, food and service were just amazing. The amuse bouche and the free Prosecco at the begining of the meal are in itself already worth a visit. The food is creative and arrangend like a piece art while still being extremely tastefull. However, they only use local products, so that one still feels like dining in a small restaurant in Tuscani and being able to try local specialities. I can't imagine how the extremely friendly and motivated young Chef still finds time to personnally come to every table and greet the guests. Moreover, not only him but all the staff is extremely friendly and attentive. On our second evening, we had the degustations menu including wine, which we would absolutely recommend.
