I stayed in Milan for 4 days and I went to Pizzium twice and I didn't dare to try other pizza places since I was afraid that I'd be disappointed. The pizza dough is fantastic. The dough is soft and tender, but crispy on the surface! For some reason the pomodoro tastes like, at least for me, that they just opened a tomato can and spread it on the dough. I'd imagine that you would at least slow cook the pomodoro sauce for couple of hours before using it but no. But I don't think this is not just for Pizzium. I went to a pasta place and ordered tomato based spaghetti frutti di mare and the pomodoro tastes exactly the same as Pizzium. I believe this is the taste that Italians like. BUt I prefer a really intense, fruity and concentrated sweet taste of the tomato sauce. The fresh ingredients of ham, mozzarella and mortadella makes all the difference on the pizza. And make sure to sprinkle a lot of olive on the pizza before you eat your first bite. You will be sent to a another dimension of the pizza world. If you don't believe me, try the first bite as is and taste second time with olive oil. Let me know what you thought of it before and after olive oil. And you should know that the olive oil served at Pizzium is not just any kind of standard olive oil you will find in a supermarket in Milan. We had to go the Rinascente department store to get it. A 200 ml bottle costs €13. And we used like a half a bottle while we were eating. Read moreThe waiter's attitude was very bad. After we sat down, we were waiting at the seat. The waiter ignored us and did not give us a menu. During the waiting period, a waiter passed us and said impatiently "zei". After waiting for about ten minutes, we found that there was a QR code on the paper on the table, thinking that we needed to scan the QR code to see the menu. So we started looking at the electronic menu, but when we were already ordering, the waiter handed us their paper menu, so we started looking at their paper menu. The ingredients are really good, the location is great and the dough is nice but the overall result in terms of pizza lacks “unity”: it is like eating a dough base with tomato sauce on it and some further ingredients on top not communicating to one another, rather than a “holistic” and “harmonic” pizza (see also my pics below). I was a bit disappointed by that, a real pity considering the high quality of the ingredients.
The desert and the service were also a bit poor: the cheesecake was made of whipped cream (?!), and the waiters were often confused or not helpful, for instance on whether the pizzas were red (with tomato sauce) or white (without)..
