In Fucina - Edoardo Papa — Restaurant in Rome

The place is in a rather old building; it is spacious, with plenty of light. There is a wood-fire oven for the pizza. We tried the tasting menu consisting of pizza slices with four toppings. The pizza dough was truly excellent: airy, thin, slightly crispy, and tasty. The toppings were of great quality and chosen with good taste. We had the chance of talking to the owner/cook and his wife, who appear to be passionate about their work, as well as cheerful. There is a good, local, artisanal beer available, which I can recommend. At the end were treated with a very good home-made liqueur. Prices are not the cheapest in town (around 35 EUR per head for the tasting menu and two beers each), but justified by the quality of the food....

My wife and I came across this little gem across from the hotel we were staying at while on holiday from Melbourne, Australia. Dropped in there for a cappuccino this afternoon and the owners were really nice and we decided to go back for dinner. We tried the margarita pizza, pasta all amatriciana and the dessert with the ladyfingers, custard cream and orange capote. All were absolutely delicious. Serving sizes were good and reasonably priced. Atmosphere was nice and the staff were very friendly and accommodating to our lack of knowing very little Italian....

Gourmet di qua di la e poi i supplì (anzi sfere di riso) arrivano freddi e con la mozzarella dentro fredda e dura.

Sono andato incuriosito dalle recensioni, ma sono sempre più sicuro che siano truccate.

Siamo andati in tre a cena.

Iniziamo dai pro:

il locale é carino e i tavoli ben spaziati

il servizio era okay

Chips molto buone

Finiamo con i contro:

come già scritto i fritti sono arrivati freddi, in particolare il suppli. La crocchetta era okay e le Chips la cosa più buona della cena

birra chiara tremenda, sciacquone indescrivibile

pizze, che dovevano essere il punto forte: l'impasto è tremendo e più simile a quello che si usa per torte salate (che devono essere croccanti). I condimenti sono okay e curiosi, abbiamo preso una con la mortadella dove hanno messo sessanta chili di pepe, disgustosa e immangiabile. Omaggio a napoli okay di sapore, anche se la verdura era fredda per cui ha rovinato tutto. Bottarga, bah, a gusto. Ricotta e bottarga comunque non mi sembrano questa grande accoppiata.

rottura di scatole con questa cosa che le pizze si assaggiano fra tutti a tavola. Come mangio sono affari miei e non gradisco queste buffonate. Se vuoi proporre assaggi metti nel menu una formula degustazione!

Si vede che c'è volontà e cura di fare le cose bene, ingredienti selezionati, ma l'esecuzione lascia molto a desiderare.

Ah tutto questo ha un prezzo piuttosto elevato, ma questo sarebbe l'ultimo dei problemi se il cibo fosse...
