I’m writing a very honest review in the hope that this bar realizes it’s full potential. We went two days ago for a drink, and Matteo was so wonderful, very knowledgeable about wine, very helpful and friendly. He gave us three restaurant recommendations and we tried two of them the next day, both incredibly delicious. He was also very fun to talk to, about Rome, transportation and everything. We only ordered two glasses but he even let us taste it first. He even gave us a charcuterie board which tasted absolutely amazing. We decided to go again today, this time for dinner. And today, it took at least 45 minutes to get our two pasta, the portions were very small, but we couldn’t even finish those. It tasted like the sauce was straight from a can and the pasta was worse than what I could make when I was 10, with just dried box pasta. There was a situation, but still, they didn’t seem to cope well. There were 3 waiters and one manager, but only two people in the kitchen. The manager rarely went into the kitchen, and didn’t seem to care about the dishes that they serve. We wanted to get wine but the waiters other than Matteo didn’t speak English and only said we should talk to Matteo. We asked using a translator and he fully understood but he still told us to talk to Matteo without making any efforts to call him for us, for another 30 minutes. Meanwhile Matteo was extremely busy, which makes sense because the other waiters seemed to need him for a lot of things. The manager never moved from the counter. Overall, I think this place has great potential because the wine was very good, but it doesn’t matter if we can’t order the wine haha. The management MUST improve because I don’t want to lose this...

However, this is a matter of taste and therefore does not contribute to the 2 stars rating. But I think it's a shame that a wine bar can't manage to temper red wines. Every amateur knows that red wine should not be drunk at 26 degrees, but rather at 18. Warm red wine in a small Osteria okay but in a wine bar?! What is also not a matter of taste is overcooked pasta amatriciana with guanciale that was as firm as leather. Absolutely bad. You can see it in the picture. The service didn't ask why the pasta was almost untouched and the place wasn't full so it would have been possible to ask. You wouldn't expect pea pasta with poorly cooked frozen peas at this place with these prices either. Certainly okay for a glass of wine, but I wouldn't come back for dinner. Better and cheaper to find even in the touristic city center. And before the owner gets mean again and thinks he knows everything better, as you can see from other reviews here: there are other people in this world who know about food and wine too. First of all, Marco, the host, was incredibly friendly and welcoming. He lived in Canada for 10 years, so he speaks fluent English, which made the whole experience even more comfortable and enjoyable.
The wine collection was outstanding — especially the champagne, which felt far beyond its price point. We even found a Barolo we bought here listed at Orma, a high-end wine bar, which speaks to the quality of their selection.
As for the food — every single dish was a knockout. You can tell it's made by a real Italian chef with heart and skill. Every plate delivered authentic flavors with impressive execution.
