Really good things happen when you put some of the best beef in the world and a chef who knows a thing or two about burgers. Enter Dragon Burger with its recipe designed by award winning Chef Rawson.
This burger starts off when a ball of really good wagyu beef meets a hot griddle and begins to hiss and sizzle right away. It then becomes compressed by a burger press into it's recognizable patty, a little salt for seasoning is added before allowing it to sit in its own fat to sizzle and cook. A quick flip over before a blanket of Kyoto sourced chopped Hachikuji scallions are applied. Finally, add the bun and the sauces.
Didn't see the staff use a timer but all the burgers came out uniformly medium well done with only a thin sliver of pink. Patty was a bit on the firm side but still oozed juices with each bite. The staff seemed to work only in small batches of 3, possibly because it's easier to control the meats doneness better (only appeared to have one guy working the griddle).
The Classic is simply constructed and compact in size but still big on taste. They were sparing on the sauce and mustard, which is great because it lets the taste of the beef speak for itself. All in a solid 4.5 for both food...

The burgers themselves are uniquely Japanese with some of the key flavour ingredients and are beautifully crafted right in front of you. This place is literally a stone throw away from the train station at Fushimi Inari shrine where it's insanely busy but the masses of tourists seem to miss this gem. I didn't catch his name but the guy who served us had a brilliant attitude and made me excited to experience what true Japanese burgers are like. The tea that came alongside the burgers was also delicious and complimented the meal wonderfully. If you are checking out the shrine and are hungry, I couldn't recommend Dragon Burger any higher. Read more10/10 recommend. I have been staying in Kyoto and walked by this place the first night I was here. I didn’t go in as I had just eaten prior. Let me tell you, everyone should go! I went yesterday and the burger was so good that I had to get a 2nd one! Which was a recommended from one of the staff members and she sure didn’t disappoint me with her choice! I can’t say enough good things about this place and that Japanese mustard give it this nice kick. chefs kiss. Hands down the best burger I’ve had and I’ve had my fair share of burgers back home in the US. To add I really don’t understand the bad reviews this place is getting and some people only come here to complain, I got 5 start service they gave me complimentary fries and onions rings after ordering...
