Spent a while to figure out where is the entrance.
Welcomed by a lady who politely handed an english menu and requested us to queue on the line outside. Waited 20 mins in the line whilst there's no one in front of us (next to ac compressors). This is a tiny shop with only 7 seats. Whole shop is managed by only 2 persons.
We ordered Shoryu soup base thick noodle + egg + katsu don. Pay first policy once ordered.
Head up, we saw a good looking (yes, seriously) mid aged guy who is the ramen chef in white apron.
All seats are bar counter type and the open kitchen is surrounded by ramen enthusiasts (similar to omakase style). We were able to enjoy the entire chef's preparation and cooking process. Soon we realised why the queue took long.
Fresh dough was thoroughly separated into pieces out from a wooden box. Each bowl of noodle was then cooked with 3 mins and 7 secs (yes, timer on the wall). Every scoop of shoryu was carefully measured. Can see the chef's determination and details in order to serve the best. As a result, amazingly springy ramen and delicious clear shoryu soup sprinklred with fresh shallots. Torched charsu were tasty. Definitely the best shoryu ramen I've ever had.
However, Katsu Don was just another top up to feed our "rice stomach" like what locals do. No surprise as the taste was outdone by the amazing ramen.
This eating stop has ended my recent Tokyo trip with some inspirations on how ramen should be cooked in best. Hope they keep doing this till my next trip.

Absolutely phenomenal ramen. Coming from someone who doesn't like shoyu ramen that much.
After seeing the high reviews on Tabelog, I wanted to come give this place a try. I used their ticketed number system and waited 30-45 minutes around weekday peek lunch time. I ordered their shoyu ramen and katsudon for a total of 1700 yen.
I usually don't eat shoyu ramen because I prefer the richness of tonkotsu broth. However, this is easily the best shoyu ramen I've ever had in my life. It is incredibly rich and flavorful, with just the right amount of saltiness. The pork and chashu were also some of the best I've ever had, no joke! The katsudon was a nice finishing touch to accompany the broth.

I regretted as i found the ginger ramen to be closer to what i like - the flavour is more intense.
The prize - the pirce of grilled and charred char siew… i wish i had added another piece or 2 of that to my noodles.. the meat was soft, and the way it was prepared brought out all the work that was put into it - you can smell the sear in every bite.
The egg was also good as it was so well seasoned. Despite ordering the shio ramen as a result, the whole meal was pure enjoyment and would not hesitate to go back again if i am near the area and if there is not long queue.
