Ramen Hayashida in Shinjuku is a Michelin one-star restaurant, and it absolutely lives up to the hype! From the moment we arrived, it was clear why this place is so highly regarded.
We anticipated a long line, so we arrived an hour before their 6:30 pm opening for dinner. To our delight, they operate a numbering system starting at 5:30 pm. This allowed us to take a number and return later, rather than standing in line the entire time—a thoughtful and convenient touch.
The ramen itself was extraordinary. The broth was a complex masterpiece, rich in flavor and clearly the result of meticulous preparation. The noodles were perfectly cooked, providing the ideal complement to the broth.
Once inside, we noticed the quick turnover of tables. Even if you don't make the first seating, there's a good chance you'll get a spot soon after, as diners typically finish within 20 to 30 minutes.

We actually attempted to come to Ramen Hayashida on our first night, but they closed earlier than their hours (guessing they sold out), but during our visit, we were recommend by one of the chef (at The Den) to check this place out.
In our experience, there was a line up building, it does move fairly quick. Be sure to know the menu beforehand (although its all in Japanese), to get an idea of what to order (you have to order and pay via their vending machine). We got the duck broth and the tsukemen. Overall, very flavorful. The egg is perfection. I am glad this was the last ramen we had heading back. Worth the line up.

A women form the restaurant came out to count people on line, I told her we’re two. My friend is coming back in two minutes. She’s gone inside the restaurant. Two minutes later, the woman is coming out to count again, she saw only me in the line, she asked me to move to the end of line very rudely! At that moment there’s still about 20 people ahead.
