Shogun Burger @ Yokohama Red Brick Warehouse — Restaurant in Yokohama

The burger looked and smelled good. Tasted ok but needed the sauces on the table to bring it to life. The thing that let it down was the paddies. Supposed to be wagyu and I get that it is probably a tougher cut but there was silverskin all through it. Never had a burger so difficult to eat. Some bits I had to spit out. See photo.. By the time I finished I wondered if it was a joke. But the staff were friendly and did their boisterous greetings with a smile. Was not instructed how or where to get a drink. Yeah, I could figure it out but it wasn't in a logical location. My cheeseburger top bun was teetering on the lettuce and fell off just as I got to the table, on the table. When you know customers have to carry out food, you ought to make it donkeyproof not a clown show. Fries were decent. The chilli for fries dip was cold, hard and fries aren't strong. Not acceptable for fries dipping. Left disappointed and feeling ripped off. Can't remember the last time I had a burger paddy and culmination of circumstances that...

Didn't blow my mind, but it was very good. My only regret is not getting the triple.

The patties are huge but thin smash patties. Like, very thin. The meat is ground coarsely, so you will get to nibble through some wagyu meat bits every now and then.

The cheese they use is awesome. It's melty and stringy with good salty flavor.

The veggies are a nice touch. The tomato slice is thick but doesn't get in the way of the meat and cheese.

The bun is kind of dense for how thin the patties are. They're still soft, but they're dense enough for me to want to a third patty to bring the meat forward in each bite.

I loved the mentaiko sauce for the fries.

I also love the wrapper they give you to eat the burger with. I usually find myself wanting to finish a burger fast so I can wash my hands sooner, but this kept my hands dry and allowed me to slow down and...

Great burger, friendly service and staff with detailed explanation of order made the food much more appetizing. I ordered the burger with a fried egg which was overall complimentary to the taste of the burger, but with the tomato almost detracted from the juiciness of the crispy beef. Would order again for a deep flavored bite, however might just get a double cheeseburger next time to savor the beef better. The juicy shogun IPA was also the great amount of hops to pair well with the dipping sauces for the fries, providing great contrast for each sip followed a with bite!
