The burger looked and smelled good. Tasted ok but needed the sauces on the table to bring it to life. The thing that let it down was the paddies. Supposed to be wagyu and I get that it is probably a tougher cut but there was silverskin all through it. Never had a burger so difficult to eat. Some bits I had to spit out. See photo.. The patties are huge but thin smash patties. Like, very thin. The meat is ground coarsely, so you will get to nibble through some wagyu meat bits every now and then.
The cheese they use is awesome. It's melty and stringy with good salty flavor.
The veggies are a nice touch. The tomato slice is thick but doesn't get in the way of the meat and cheese.
The bun is kind of dense for how thin the patties are. They're still soft, but they're dense enough for me to want to a third patty to bring the meat forward in each bite.
I loved the mentaiko sauce for the fries.
