Ngiu Chap (Small) Soup Version, with Mee Licin Noodles = RM12.00 No Service Charge
Randomly discovered this place on Google Maps that apparently serves Sabah Foods. Really Friendly Place run by both Sabah and Indonesian folks. The Cook especially is from Sabah so I reckon it should be quite Authentic. They also have Various Sabah Snacks for Sale. That said, the place did felt abit Stuffy and Warm even though they have Ceiling Fans.
Ngiu Chap is apparently a Classic Dish from Sabah Malaysia. The Name "Ngiu Chap" is a direct translation from either the Chinese Word "牛杂" (Mixed Beef) or "牛汁" (Beef Sauce). Different Places seems to have different ways of interpretating it seems.
And the Dish is exactly what it is, a Mixed Beef Broth normally served with Noodles. The Classic Noodles used for Ngiu Chap is Mee Hoon but I was recommended to choose "Mee Licin" here. Normally I try not to add any Carbs, but as I have never eaten this before, I didn't mind giving it a try.
Mee Licin is like a Slightly Thicker Version of Mee Hoon and is Very Soft and Tender and slides down my Throat easily, although this tastes like its probably from a package and not Handmade. Amount given is Filling and Acceptable for the Price.
The Chilli has a Very Intense Deep Bitterness using an Unknown Type of Spice. Its neither Sweet nor Salty and leans more towards Sourish. The Spiciness doesn't hit you immediately but grows on you, and the Heat does Linger to bite your Tongue. Very Deep and Complex Chilli.
The Beef Broth does not exactly taste like the Chinese-Styled Beef Noodle Soup that you may be familiar with. I mean it has a Beefy Essence in it, but I feel it leans more towards the Sweeter Side. Slightly Thick in Viscosity but still Liquidy. This is a Well Made Beef Broth although abit too Sweetish for me.
Amount of Beef Parts impressed me the most for the Small Bowl I ordered. There are at least 3 Beef Balls, Many Pieces of Tendons, Tripe, Meat and Various other Beef Spare Parts.
The Beef Balls have a Firm Bitefeel with Noticeably Lots of 牛跟. Its Juicy and tastes Well Marinated with Spices. This tastes Handmade and not a Packaged Product.
The Various Meats are Firm but still Tender to the Bite. Some Slices tastes Particularly Smooth which have probably gone thru the Velveting Process. There are so many Variety of Beef Parts in the Bowl, it almost felt like a Mini Beef Parts Buffet.
The Dish on a Whole is Very Well Made, although I felt the Broth did start getting abit too Jelak for me near to the end of the Meal due to its Sweetness. One thing I also noticed is the lack of Vegetables in the Bowl and I wished they added some Salted Mustard Greens 酸菜 which would have given the Dish at least some crunch and another Layer of Dimension.
If you have never tried Ngiu Chap before, I can recommend this place. At RM12.00 (S$3.50) this is worth the money to come give it a try. I've never eaten Authentic Sabah Ngiu Chap before, so I don't know how authentic it is, but it is a Well Made Dish. I particularly appreciated that the Staffs are Friendly and made me feel welcome eating here.
