The dry-aged steak itself was fantastic, served with three different dipping sauces, Thai-inspired sauce was unique, adding a bold and unexpected twist. The grilled cabbage was another unforgettable dish, elevated by grated cured egg yolk + parmesan, which gave it a rich, creamy texture. Every bite was so comforting. Throughout the meal, he continued to surprise us with bite-sized tasting portions, each offering a unique and unexpected delight. Had the pleasure of trying the house-made duck prosciutto, aged to perfection and beautifully paired with burnt orange and tomato bruschetta. He kept surprising us with dishes that he creates in a whip. He was so nice to let us try the prawn stock from his kitchen, a bold, umami-rich broth with an intense prawn flavour that truly showcased the depth and complexity of the chef’s techniques. Chef went to the extra mile, offering us an exclusive tasting of his off-menu creations. His generosity and dedication to his craft made the experience even more special. Instead, a couple was asked to move so we could sit there, and from an outside perspective, it felt a bit awkward and poorly managed thankfully, the couple didn’t seem to mind.
