I think there is really a problem with how their kitchen and some service works. I have eaten here thrice and am finally leaving this review since there really hasn't been much improvement in how the food is served since I first ate here. Three of us today, and we had the dimsum brunch buffet. After ordering from the relatively comprehensive list, the first few items arrive okay, but as the orders are slowly checked off the list, the problems start to mount. After being informed that the orders are cooked to order and take 15-20 minutes to serve, after an hour and a half we still have 5 dishes left unserved, we were consistently served items we didn't order, and some dishes that were served barely hot (either microwaved or left at the counter for very long) and despite 4 to 5 follow ups with the staff. And this is supposed to be cooked to order. Jerry, the manager and the one helping to serve was really great at his job is the saving grace.
Such a shame, considering this is supposed to be a Hilton managed property. The ambience was really nice though.
Definitely better dimsum brunch options out there and this will be likely my last time here unless they significantly improve. If there is no choice but to eat here, I would go with the Oxtripe, Ham Sui Kok, Fried Rice, beef ball, Hot and Sour Soup, and the Shrimp Cake. Then again, maybe it was just luck? Please don't blame me if ever. :) The touted hakaw was so-so, more of extender and filler than actual shrimp. Or maybe the ones we got were recycled/reheated hence the quality? I really have no idea anymore since other dimsum places are able to perform at a higher level despite being so much busier. Just to mention, they were also between an estimated 30-40% capacity when we sat down.

Once all our food was delivered the staff literally and deliberately ignored us even when we tried to pay our bill. I politely called the waiter, he looked at me and walked away. No one came to check on anything like we were eating at a fast food establishment. Mind you, there were only 4 other tables occupied other than ours. One in particular was obnoxiously loud. My mother had to walk up to a counter to get someone to help or even look at us. As diamond status members, my family has relied on the Hilton for years to provide a relaxing and memorable experience for our travels. It’s unfortunate that a restaurant like this is invited to sully the experience of staying at one of their hotels. We will make it known to the Hilton that this restaurant is harming its reputation. Read moreI had a wonderful experience with the Shanghainese cuisine here. The meal began with a complimentary appetizer of crispy rice with seaweed, which was delightful! Kudos to the chef for that. The variety of soup dumplings was impressive; I particularly enjoyed the classic xiao long bao and the crab version, both were delicious.
The crispy pork stood out as my favorite from the meat platter—absolutely fantastic! However, I wasn't as keen on the Hainanese chicken, which was served a bit too cold, and the beef shank felt a tad dry. I’d recommend sticking with the crispy pork.
The truffle fried rice, mushrooms with asparagus, and braised pork were all excellent choices. The steamed grouper was fresh and flavorful, but it would have been better if the waiter had deboned it properly, as I almost choked on a fish bone. This could pose a risk for kids.
