The Time Out Market is one of those rare places where energy practically hums through the air. The crowd was electric — shoulder to shoulder, a sea of motion and conversation, the clinking of glasses and the rhythmic scrape of cutlery against plates echoing through the open hall. It was absolutely packed, yet somehow mesmerizing to just sit there, sip my wine, and watch hundreds of people swirl through the aisles like a living current of color and laughter. I decided on Liberta Pasta Bar, tucked along the quieter backside of the market — or at least as quiet as anything can be in a place this bustling. I’d actually stumbled upon it after heading toward the restroom, when a woman by the door waved me off with a cheerful, “No, no, come in!” I laughed and asked, “Are you cleaning it?” She smiled, “Yes, clean!” and pointed down the hall toward another one. That little exchange, simple as it was, somehow fit the whole spirit of this place — busy, yes, but filled with good-natured warmth. The back corridor opened up like a hidden gem — a row of small restaurant counters, each lined with maybe five to ten barstools. I was lucky to snag one at Liberta. Every seat seemed to vanish as quickly as someone could blink. My server, Mamun, was a gem in motion himself. Calm, attentive, and utterly unshaken by the fast-paced whirlwind around him. He answered every question with confidence, clearly knowing the menu and wine list by heart. He recommended a lovely red — Rain de Luz, Vinhad Veithad — and it paired perfectly with my pasta. You could tell he truly enjoys his job, and that kind of passion shows. For lunch, I chose the Ravioli di Manzo — handmade ravioli filled with an eight-hour braised ossobuco, nestled in a rich beef jus with mushrooms and rosemary. When Mamun set the dish in front of me, the aroma practically wrapped itself around me — the deep, earthy perfume of beef and mushrooms, with just a whisper of rosemary floating in the background. Each agnolotti was generously stuffed, almost bursting at the seams, yet holding their shape just enough to tease. The jus was the real star — clearly made in-house, rich with the depth that only slow cooking can bring. It wasn’t salty or heavy; it was pure, honest broth drawn straight from the soul of that ossobuco. As I sat there eating, I couldn’t help but watch the team at work. Despite the crowd, despite the noise, every employee wore a smile — some soft and content, others bright and contagious. They moved with a rhythm that felt choreographed, like a culinary symphony unfolding behind the counter. Each plate passed through several hands before reaching a customer — inspected, adjusted, perfected. A soft breeze drifted through the open doors, carrying with it the mingling scents of basil, parmesan, and San Marzano tomatoes from the chefs station nearby. The air was thick with flavor and energy, and I could practically taste the scent itself in every breath. It’s been a full, delicious, and utterly vibrant afternoon — and though I’m wonderfully stuffed, I find myself already wishing I could start from the beginning and do it all over again.

My experience was poor! Food: 1 out of 5 - They made undercooked pasta which was kind of surprising as they are famous for that! I had chew so hard which is not i expected. Service: 0 out of 5 - They are just slow and they never check with you about how was your food or they dont even care about getting the bill you have to ask twice to get the bill so you can pay and leave. Plus they ask you for tip and say we recommend 10% which was funny as they never checked on us how was the food. I feel they were just there to get the job done Price: 1- out of 5 , I did not feel worth, but they say they make hand made pasta which is true. I did not feel any worth for spending any money here, i wish i would have gone to a better restaurant. Overall: i was here to get a better experience based on reviews and i dont think i will be back

I visited Libertà Pasta Bar at the Time Out Market and it quickly became one of my favorite food stops in Lisbon. From the first bite to the last, it was just satisfying in a way few places manage.

I started with the gnocchi Cacio e Pepe & Tartufo. The gnocchi were pillowy yet had the right chew, the pecorino and black pepper gave that familiar bite and the truffle pulled it all together into something rich without being heavy. Then I tried the Ravioli di Manzo. The pasta wrapper was delicate, the filling full of beefy depth and the sauce bright but grounded. The Fettuccine all’Amatriciana surprised me with its tangy tomato sauce, crisp guanciale bits and perfectly al dente pasta. Finally the Tagliatelle con Ragù alla Bolognese brought warm comfort slow cooked ragù, thick ribbons of pasta and the sort of sauce that makes you think this is how it always should taste.
