I decided on Liberta Pasta Bar, tucked along the quieter backside of the market — or at least as quiet as anything can be in a place this bustling. I’d actually stumbled upon it after heading toward the restroom, when a woman by the door waved me off with a cheerful, “No, no, come in!” I laughed and asked, “Are you cleaning it?” She smiled, “Yes, clean!” and pointed down the hall toward another one. That little exchange, simple as it was, somehow fit the whole spirit of this place — busy, yes, but filled with good-natured warmth.
The back corridor opened up like a hidden gem — a row of small restaurant counters, each lined with maybe five to ten barstools. I was lucky to snag one at Liberta. Every seat seemed to vanish as quickly as someone could blink.
My server, Mamun, was a gem in motion himself. Calm, attentive, and utterly unshaken by the fast-paced whirlwind around him. He answered every question with confidence, clearly knowing the menu and wine list by heart. He recommended a lovely red — Rain de Luz, Vinhad Veithad — and it paired perfectly with my pasta. You could tell he truly enjoys his job, and that kind of passion shows.
For lunch, I chose the Ravioli di Manzo — handmade ravioli filled with an eight-hour braised ossobuco, nestled in a rich beef jus with mushrooms and rosemary. When Mamun set the dish in front of me, the aroma practically wrapped itself around me — the deep, earthy perfume of beef and mushrooms, with just a whisper of rosemary floating in the background. Each agnolotti was generously stuffed, almost bursting at the seams, yet holding their shape just enough to tease.

I started with the gnocchi Cacio e Pepe & Tartufo. The gnocchi were pillowy yet had the right chew, the pecorino and black pepper gave that familiar bite and the truffle pulled it all together into something rich without being heavy. Then I tried the Ravioli di Manzo. The pasta wrapper was delicate, the filling full of beefy depth and the sauce bright but grounded. The Fettuccine all’Amatriciana surprised me with its tangy tomato sauce, crisp guanciale bits and perfectly al dente pasta.
