Most ratings in a restaurant are split between food taste/quality, the friendliness of staff, and the vibe / feeling while you are there. For Ettu, there should be a fourth category to explain the “experience” this was. The journey began by finding the restaurant. They are a little hidden, but I guess all gems are. We were welcomed by Viviana, who only at her 30 years of age, is an absolute star, creating this restaurant and the whole concept behind it. We were walked to our table and explained the source of things we were going to use in the restaurant during our stay, such as where the cutlery is made and by whom, the source of some of the ingredients, and why some things are made or cooked the way they are. Very nice and immersive experience. We were given an “entrante” that was fantastic. We didnt order it so no idea what it was, but incredible nonetheless. For our meal, we had the tuna - which was absolutely mindblowing and melting in your mouth -, for which I also ordered a spicy sauce done locally in Tarifa called Kema Kulo. My friend ordered the terrina de cordero, which was also done to perfection. We drank some tempranillo wine. For dessert, we had the pistachio coulant (WOW, just WOW!), and the cheesecake (which was too “cheesey” for my friend), so we ended up both eating my pistachio coulant. We love Spain, and in over 25 years of travelling around it's wonderful cities and coastlines this is the happiest evening we've had. Ettu is a magical place. It was new when we visited, just over a week old, but it felt like it had been there for years. The staff are so lovely and friendly. The setting is exquisite and feels like a time machine as you walk through a sleek, dark panelled wood corridor and onto a perfectly lit terrace surrounded by a centuries old, unreconstructed building. Then there's the food... here goes: fun, local, innovative, exquisite, delicious, perfect, I'm running out of superlatives. The opening anchovies on traditional crispbread were an explosion of taste. The house Caesar salad prepared before you was fantastic. My solomillo in Oloroso, served with flick-knife btw 😀, was as good as the best. The local fine-wine did the trick. And then the house deserts (again finished at the table as wonderful theatre) were beyond compare. We were very lucky to find this place partly by accident, and it will stay with us. It deserves success, awards, and a happy future. Thank you Ettu x

PS. As an added bonus, there's a hidden rooftop bar in the attached Hotel Olom that overlooks the cathedral opposite. The young bartender there will make you the most delicious margarita (I went traditional with Padron tequila, not spicy) to get you...

I am stunned this gem of a restaurant does not have a Michelin star. We stumbled upon this place wandering around Cadiz. What incredible luck. This restaurant is hidden away in a small boutique hotel. The restaurant is beautiful and elegant inside. Simple but many amazing touches make this place special. The food from the bread service to each course served was a carefully choreographed dance. The service was beyond excellent and the waiters Juan and Miguel served every course with passion and attention to detail. They were proud to introduce to the local origins of each element of the meal. The bread course was a feast in itself fresh crusty soft inside served with local olive oil truffle butter and basil butter was divine. The local wine was a perfect compliment to our meal. We had the tuna tartar and bone marrow starter and I still am dreaming about this unctuous dish. My friend had the Iberico jam and shaved cheese which was served with a citrus sauce that was delicious. There was also an amuse bouche of Russian salad which was also very delicious. Our main course was the mushroom risotto and the lamb tagine. Both were delicious the lamb absolutely sumptuous. We were too full for dessert but topped the dinner off with a lovely sherry.
