The setting at les Trois Verres is very pleasant, and their wine list has a great selection, and a highlight of the experience. The service was attentive and welcoming, but I had some difficulty understanding the person who was serving us, which made communication a bit challenging. Maybe it was their first day and were nervous which would make sense.
What surprised me most was how quickly the food arrived, barely 30 seconds after we ordered. While I understand that speedy service is appreciated for those on the go, in a gastronomic setting I would have expected dishes to be freshly cooked rather than pre-prepared under heat lamps. Unfortunately, this showed in the execution: the mashed potatoes were lukewarm, and the duck was on the tough side.
It wasn’t a bad experience in any way, but for a restaurant that positions itself as gastronomic, I would have hoped for more attention to detail in the food. With such a nice setting, a great wine selection, and genuinely attentive staff, there’s a solid foundation here, it just needs more consistency on the culinary side to fully live up to its potential. Par ailleurs, le patron a profité de l'ambiance festive et de la confusion ambiante pour râper presque 10 grammes de truffe blanche sur un plat de tagliolini sans en discuter clairement au préalable. Cela représentait un supplément de CHF 140.- pour un plat somme toute ordinaire. Lorsque nous avons protesté, il a prétendu que nous aurions dû lui dire de s’arrêter, malgré l’évidente précipitation avec laquelle il agissait, ignorant que nous étions en pleine conversation entre amis.
Face à nos remarques, son attitude a basculé dans l’arrogance et le mépris, allant jusqu’à justifier son comportement par le coût initial de la truffe (CHF 6'000.-). Il a même rejeté la faute sur son personnel, accusant ce dernier de ne pas nous avoir prévenus à l’avance, alors qu’il semblait manifestement chercher à écouler rapidement ce produit de luxe.
Ce comportement, loin des standards de courtoisie et de professionnalisme attendus, laisse un goût amer. Malheureusement, "Les 3 Verres" est un établissement que nous ne recommanderons pas, sauf à vouloir subir un service empreint de manque de respect pour la clientèle.
Five of us friends had been sitting at the table for almost an hour when the owner asked us to move to a table designed for four people, just to allow some acquaintances who had arrived late to sit more comfortably. This change, imposed without any consideration for our comfort, was an initial source of annoyance.
What's more, the owner took advantage of the festive atmosphere and confusion to grate almost 10 grams of white truffle onto a dish of tagliolini without clearly discussing it beforehand. This represented an extra charge of CHF 140 for an ordinary dish. When we protested, he claimed that we should have told him to stop, despite the obvious haste with which he was acting, unaware that we were in the middle of a conversation between friends.
In the face of our remarks, his attitude became arrogant and contemptuous, going so far as to justify his behaviour by the initial cost of the truffle (CHF 6,000). He even put the blame on his staff, accusing them of not having warned us in advance, even though they were clearly trying to sell this luxury product quickly.
This behaviour, far from the expected standards of courtesy and professionalism, leaves a bitter taste. This is my honest review of the Italian restaurant Les Trois Verres in Plainpalais neighborhood, Geneva. Very good inspiring Italian food with friendly service are awaiting you there. Plus they open from 6pm which is practical if you are going to an evening show nearby. They also have beautiful artistic pics of food ingredients and wine displayed. Highly recommended.
