Let me tell you, 143POLARIS has me believing in the osmotic flow. Even their light roasts seem a lot darker than what I'm used to, but they still taste so fruity with a nice chocolate background note. It's as if they only extracted the best possible flavors from the beans while leaving the woody notes behind. I got both a hot and iced coffee, and they're both deeply flavorful and aromatic.
Their beans seem to be fresher than the other coffee shops I've visited so far based on the roast date and the fact that I could see them roasting to second crack while I was there.

The sumiyaki method produces a delicate layering of flavors that augment the carefully selected coffees without sacrificing their unique origin characteristics, producing cups wholly distinct from those offered by more commercial single origin roasters in the American, European, and Australian traditions. The charcoal roast method of sumiyaki requires a high level of mastery that has produced true artistry at Polaris.
