I ordered the spicy miso paitan. At first, I was surprised that the the miso was not yet already blended into the soup when it was served, but came as a ball on top of the bowl. However, eventually it allowed me to taste the broth on its own. The paitan itself was already delicious, vicious, but not too thick and oily, with a very pleasant taste. As soon as I mixed in the miso paste, the broth became even more flavorful and the perfect mouth feeling. The chili oil added a great depth of flavor. In contrast to many other ramen shops, the chili oil is not only spicy, but carries a lot of body which reminded me of Sichuan fragrant hot oil. I wished my bowl had even more of it.
The noodles were good and fit the overall impression of the bowl. The onions were my favorite topping, as its sweetness perfectly matched the booths richness. The pork chasu was good, but it was about 80% of fat. If had wished for a higher share of actual meat. The chashu thus would be the only drawback, but the overall the bowl was too good to be rated...

The menu can be viewed by scanning a QR code on the table, but orders must be placed in person. Their special Birdman white broth ramen served with thick-cut pork chashu and a soft-boiled egg is a highlight, especially the unique-tasting handmade chicken meatballs. The sesame flavored bamboo shoots side dish and a large drink are also good. The noodles are thin; a normal hardness is recommended. During peak dining hours, you'll need to register at the entrance and wait, with no need to leave a phone number. The seating is limited, with the bar area being slightly cramped and chairs somewhat unstable, but overall the experience is acceptable. The special spicy ramen with chicken meatballs is unique, with a non-salty broth, generous noodle serving, and fragrant chili. An extra noodle order took 10 minutes, which was a bit long. Overall, this restaurant is worth a try, especially for those hungry...
