Chai Jia Chai offers a Chinese omakase experience that is as unique as the name implies as it is exciting. Chef Chai is a true master of worldly gastronomy that astounds and delights. Every dish is singular and wows. It echoes his curious mind that must be constantly asking "What if...?" He takes his curiosity to faraway lands like South Africa and Alaska to marry prime ingredients from those places with premium ones found in the regions of Thailand. With his command of the intricacies of Taiwanese cooking, he puts his signature in how he assimilates not only the cross-country ingredients, but also the best ways to cook and bring out the flavors. Take for example the magnificent Alaskan King Crab Porridge with dried radish, dried Cantonese tangerine peel and spices, all simmered for 8 hours. You are shown the big live crab before the dinner starts and some minutes later it is served in a heavy stone bowl. The porridge is not as think as congee but it has that hearty voluminous rice texture and the Umami of the crab and spices. It is like a hot fisherman's dinner on a wintry day after hours on a trawler in near-polar air. My favorite dish was the dry-aged A5 filet with black garlic sauce, sous vide radish and sweet and spicy miso sauce. It was incredible how he could grill the cut of beef that had a crispy exterior similar to a fish skin snack while the meat was super tender to the knife. There is no way I could make the outside of a steak soft but crispy like that while still retaining its juice. Chef Chai is a true genius. The ambience of the small restaurant just makes you forget about the busy world outside. Here, it is quiet with soft, mood lighting that compels you to take your time and just focus on what's in front of you. It is a place for a special occasion so don't go alone. The ground-floor location in a building just off a busy set of sois in the Sukhumvit area means it is easily accessible with good parking while it is removed from the hustle and bustle of the city. Service is cozy, personal and highly professional. Khun Fern, the chef's charming wife and maitre d' took time to explain the origins of each dish, the ingredients used as well as how to enjoy it. Every spoonful had a story and that what makes dining at Chai Jia Chai such an educational and rewarding experience. Chai Jia Chai not just delivers on great food in a soulful atmosphere. Everything is lacking in this restaurant: atmosphere, menu creativity, food quality and service; with unjustifiable high prices. The atmosphere is dark, empty and lack of taste, looks like they took over an existing restaurant and kept everything intact. The dishes are all over the place and some are very bland and some are very spicy, I didn’t see anything that was creative as claimed by the restaurant at all and also nothing resembles Cantonese food or any other Chinese regional food in my opinion. The dishes lack refinement and sophistication, and simply cannot justify the high prices. The food quality was unexpectedly bad, the flavors are either too bland or too spicy and the food textures were far from perfect; the red BBQ pork (char siu) was lean, tough, undercooked and I declare it the worst I have ever had; it is everything opposite to the BBQ pork from the famous Kam’s Roast... The wait staff were inexperience and they managed to not fill my water glass for the whole second half of the meal and they couldn’t explain well about the ingredients.
