“TEIBLE”, a pleasant surprise at the Jameel Arts Center in Dubai.
«Teible, artisan bakery and fine cuisine restaurant, where fresh, seasonal local products take center stage. Located in the Jameel Arts Center it offers a creative and lively menu designed with a simplistic approach to cuisine.
The setting itself, designed by renowned architecture firm @waiwaidesign effortlessly combines natural elements that pay homage to Japanese and Scandinavian design, creating an inviting atmosphere. Floor-to-ceiling windows allow soft light to filter through; while Artek's furniture, designed by Alvar Aalto: a Master of Modern Architecture and the ceramics of a collective of artists such as Slo Ceramic from the United Arab Emirates, KH Würtz from Denmark and Kwang Ju Yo from South Korea tell us about the naturalistic themes of restaurant. When it comes to food, executive chef Carlos Frunze works closely with local farmers in the UAE to offer a concept of home grown food for thought. Healthy and seasonal crops are expected to be foraged and fermented locally.
Teible presents a seasonal tasting experience designed to transport diners on a culinary journey crafted with Scandinavian sensibility. Diners can expect a tasting menu featuring experimental homemade products, such as a caramelized camel paste with camel ricotta, fennel, parmesan broth, black olives, and charred fennel; and a lamb and kimchi dish that combines lamb, chard, fermented kimchi, lamb jus and corn. To sublimate this gastronomic experience, an accurate explanation made of white cardboard will accompany each dish with the aim of guiding diners through the creation and taste discovery of the dish.
Teible also makes sure to combine simplicity and innovation in an effort to maximize the potential of each ingredient used, thus helping to conserve resources while simultaneously creating thoughtful dishes. For example, Teible's talented culinary geniuses use leftover whey from the cheese-making processes to create caramel, which further serves to sweeten the spicy hot pies of Sirniki cheesecake. The team also offers eco-friendly biodegradable take-away packaging.
As for the Bakery, Teible offers a menu full of pastries, freshly baked sourdough and desserts, accompanied by Danish roasted coffee specialties from La Cabra Roastery.
The latest quirk is a mysterious dish, which comes accompanied by a white card with the words "Trust the Chef". It serves as a reminder to diners that food is as much an emotional journey as it is a physical journey and that the best way for chefs and customers to connect is to take a culinary leap of faith. It promotes itself as a new food culture designed around a simplistic kitchen approach driven to promote eco-conscious practices and initiatives that reduce their impact on the environment. It falls in the category of fine dining with a very simple atmosphere and approach. Teible is unique that it promotes locally sourced ingredients. In my view, this would be the way the food scene in Dubai could elevate to reach global cities standards. My experience was overall pleasant. Unfortunately, some items were not available like the salmon, the beef tartare or even the Tasting Menu. This may be acceptable for once, but if it is a continuous issue, then it will have an impact on the consistency of delivery. The lamp was chewy, hard and served cold. Similarly the Prawn was served cold. Other than these two notes. The experience was really enjoyable.
