Ate here for lunch. Little hole in the wall downtown. Love little hole in the wall establishments. Theyre always making the best food. These guys however missed that mark for me. They even have odd hours making them that much more exclusive. I always say less is more. If they served food 7 days a week 14 hours a day it would probably lose the love that places like this are all about. Unfortunately that love is barely present here.
Food was good. The mac and cheese was definitely a cut above. Gooey cheesey and good flavor and spice. It was the highlight of lunch. I had a jalapeño popper burger to go with the Mac. It was a fun concept but nothing to write home about. ( I guess unless youre writing a review) It had a cream cheese dressing with bacon and japs in it. Honestly for being a jalapeño popper burger the japs seemed to be in the background if barely present at all. They should have been the star. It came with brisket and onion rings stacked on it as well. In my case though it was onion RING. Not plural with a few crispy rings just the one. It covered half the burger. Disappointing. Over all the burger was good but I expected more. My daughter had an avocado burger with fries. I cant speak for the burger. It looked tasty. The fries however were just boring crinkle cut fries from the freezer and they lacked any kind of seasoning. Again slightly disappointing. I expect a place like this to be cranking out home made potatoes. Just my opinion.
The atmosphere was quiet even with a full house. The seating was lacking as well as. We sat in metal fold out chairs that hurt your butt. Not my ideal choice for dining in any situation honestly. These chairs are made for uncomfortable conference rooms and wrestling. You know the kind Hulk Hogan would pull out from under the ring and bash Macho Man with....RIP to both...and yes I just showed my age.
The wait staff seemed friendly. I say seemed though as I didnt get the impression that it was genuine. You can tell when someone is being quaint and that's the feeling I got from the lady at the counter. She seemed a bit curt and impatient with me. Almost like I was inconveniencing her. Not going to lie I also expect staff to be knowledgeable on the menu. When asked what something is cooked with then answering with "i dont know" without trying to find out and be informative is not acceptable to me. Especially when I already feel like you're being rude.
Overall the experience was ok. Pricing seemed fair to me. Average for a place like this serving what they did. I didnt expect less. If anything the star was the mac and cheese and is what would draw me back to try other homemade items, barely. I would say its a hit or miss and I could stand to miss...

Driving home to California from Central Texas, searching for somewhere to eat in Amarillo, and we were loving it from the first taste of Shrimp Gumbo (which was so good my wife bought a bowl, to go). We ordered the Pulled Pork Grilled Cheese with fries, and added a side of Mac and Cheese. Our friends ordered the Shrimp Gumbo, and the Shrimp Étouffée. The Gumbo was delicious from bite one that was shared with everyone, seasoned perfectly and full of flavor. That first taste only created an excitement for our food to be brought to the table. The Pulled Pork Grilled Cheese is not a traditional Grilled Cheese, it was on a soft roll (I'm not sure what kind), but my first bite was so good, the pork is so tender, I just wanted more of everything. The fries were perfect (with and without ketchup), well seasoned and crispy. The Shrimp Étouffée (yes I Googled the spelling), was given to our slowest eater, and it was so good he was the first to finish his meal, he said he loved every bite, and thought the one piece of shrimp she got to try was amazing. We didn't get to speak to Chef Ron, but we did get to talk to his wife Tina, who was working the front, she was so nice, and her "staff" were very cute, and so helpful. But, I come here quite often for full meals, and Chef Ron and his crew always deliver incredible food, great service, and a terrific value. I can personally attest to the ridiculous quality of the Amarillo Nachos, Jambalaya Pasta, and Pit Master Mac & Cheese along with all of the desserts. (I've got a sweet tooth, man. What can I say?) In addition to being a great cook offering delightful fare, Chef Ron is just a great human being, too. Love this place.
UPDATE 1 day later: I was so tempted yesterday that I had to go right back for an actual meal. I once again had the Pit Master Mac & Cheese. And dang it was good. Great. Had another beignet.
