Full Transparency here. I pulled into Buccee’s so I could get a brisket sandwich and was immediately reminded of the lunacy that is the glorified truck stop spectacle so many love and adore. I turned around and hit the first BBQ joint that I could find and it was Billy’s. Billy’s BBQ was a few notches above the standard BBQ spot experience. The Service - Average. They greeted me and said goodbye, but it wasn’t with a smile. I’m not snow bunny soft so I didn’t take offense. The Food - Above Average. Chopped Beef Sandwhich with pickles and light sauce. One meant plate with sausage, slaw, and pinto beans. The chopped beef sandwich was a bit on the salty side but had plenty of flavor. I requested light BBQ sauce which likely would’ve balanced out the salt. !!THE SAUSGE IS EPIC!! It’s a beef blend sausage they make in house with their own seasonings. Blended twice so the texture was amazing and it snapped first bite. Not chewy. Its flavor is out of this world. YOU MUST TRY IT. Slaw was home made and slightly above average with a hint of sweet and pepper. Beans tasted like ranch style beans out of the can. Jokes on them if so, because I love ranch style beans. Atmosphere is pretty cool, tons of locals. A group of men sitting around drinking tea and talking. Deer heads are abundant and hanging on the walls. Golden age of country playing on the radio. We came for a glamping trip and looked for a BBQ spot to try. Billy's was the first that popped up and at 4.5 stars we decided to give them a try. It is now 7:43pm on December 29,2023 and haven't moved for the last 2hrs. Maybe we should have ate first then Walked a trail or Main st. We ordered the Family pack which was almost $100, 2 large sides mac and cheese and potato salad, 2lbs of Brisket and 2lbs of Sausage, onions, pickles and a loaf of bread. This family pack is worth every penny. The only downside is that they only had a small Mac and cheese left so we had to get green beans which to be honest no one tried so I can't give you a rating on those. What I can tell you is that this BBQ was among the most satisfying and the best I've had. Most BBQ spots I've been too give their all to the meats and serve sub par sides. Not Billy! Billy's sides are delicious. The potato salad and mac and cheese compliment the meats perfectly. So as I lay here writing this review I can only tell you to not over eat. Save some for later. Left overs are okay. Portion control. We went late in the evening looks like the staff were miserable didn't want to be there. The owner an elderly lady was just as miserable didint look at me say hello nothing. A young man that was putting stuff away was the only one that acknowledged me. We got $114.00 worth of meat / sausage the owner was the one that took our order on the phone. When we left I looked in the bag we didn't get barbecue sauce,pickles,bread. I went back in and asked the owner I didn't get barbecue sauce she said who ever placed order didn't ask for it, that's not true who doesn't need sauce with their barbecue?? I asked for crackers bread each one by one it was like pulling teeth. When we first walked In the owner was counting the till but like I said not a smile or hello. But when we were going to give her the card to pay she made sure to put the tip bowl out after making us feel like we were putting you out like you didn't want us there? You're staff looked scared to be there like they are asking for help to get out. The meat had lots of fat looked like it was half fat half meat. But the meat with out the fat was very good and...

Upon walking in, you get that Texas hospitality with multiple staff greeting you. The service was great and they even gave me a sample of sausage that was so good, I added it to my order. There is only one type of brisket which is in the middle between lean and moist but leaning more to lean. It was above average. The STL pork ribs were exceptional with perfect tenderness. The bbq sauce is more watery and vinegar based but was just right in terms of flavor. The sides were also delicious. If you like creamy Mac & cheese, and potato salad, they nail it. The coleslaw was just like the way we like it, wet and heavy mayonnaise based. The cream corn was the sole let down. It def was not creamy so that could use some improvement. Def worth the stop if you are in the area and looking for a local spot versus the commercialized modern Southside market location close by.

The baked potato alone is perfectly cooked, the chopped beef is super tender, the BBQ sauce has an amazing flavor and truly makes it a one of kind! The tea was great, the Macaroni Salad side was delicious and the staff gave us some samples of sausage (I never have been a sausage fan) but wow, I decided to take a bite and wound up ordering a link. I’ve eaten BBQ all over the nation and this is hands down one of the best places I’ve ever been to. I highly recommend anyone who loves finding unique BBQ joints, this is a must add to the list! To the staff & Mr. Billy, thank you once again for treating us out-of-town folks as if we were part of yalls family. See you folks on the way home from vacation!

Sitting in the car while in the parking lot eating this amazing stuffed baked potato and couldn’t wait any longer to post a review. The staff is amazing, super friendly and Mr. Billy was super nice. The baked potato alone is perfectly cooked, the chopped beef is super tender, the BBQ sauce has an amazing flavor and truly makes it a one of kind! The tea was great, the Macaroni Salad side was delicious and the staff gave us some samples of sausage (I never have been a sausage fan) but wow, I decided to take a bite and wound up ordering a link.
