Launched a mere three months before our visit by Europe-based Spaniards who fell in love with Breck, Mimo was the best restaurant find of our 2021 trip to Breckenridge, CO, and has quickly become the family's favorite.
Firstly, let me praise Mimo's food. After back-to-back, leisurely evenings playing cards while dining on tapas, every dish we've tried was fabulous. From their fall-apart tender lamb loin over sweet potato purée, to their ham & cheese croquettes, to their airy shrimp tempura, to their creamy hummus, and even their kids' chicken fingers with homemade macaroni & cheese...all were perfectly executed. You know a restaurant is on point when parents order seconds of kids' menu dishes, just so they themselves can enjoy them. Go early, or risk Mimo running out of their most popular offerings. The good news/bad news for us? With the possible exception of their paella, we now prefer Mimo over our favorite tapas restaurant back home in Dallas, TX.
Secondly, Mimo's cocktails deserve their own special recognition. Rarely do my wife and I order more than one alcoholic beverage each when dining out. However, after inquiring about several eye-catching cocktails which passed by our table, we ordered a second round at Mimo. The bevy of delicious and alluring concoctions being meted out by Mimo's resident mixologist are hard to resist. I say "mixologist" rather than "bartender," because almost ever table in this cozy cafe is a ring-side seat from which patrons can observe this sultan of spirits crafting cocktails with the precision and intensity to rival a master sushi chef at work. For myself, their sangria has become that against which I measure all others...a distinction previously held by Relish, another wonderful restaurant just across the street.
Lastly, service at Mimo was consistently engaging and attentive. Their Internatonal staff demonstrated professionalism, attention to detail, good humor, and a genuine affinity for one another. We hope to see the same crew, if we're fortunate...

After a long day skiing and snowboarding, fine food & drinks are the best way finish your evening. We were delighted to find a table at Mimo Fine Tapas, a small hole-in-the-wall restaurant on the Main Street in Breckenridge down the stairs below street level. Great ambience with friendly staff and a well stocked bar and wine cellar. We called early to check the best time, the staff were very helpful. The menu was well explained by our server Robert and he gave us great recommendations for food and wine. We tried all of the top items and they were incredibly great. Thoroughly recommend the empanada, especially the chef inspired tomato salsa and chipotle aioli sauces. The croquettes were the BEST, with a perfectly blended aioli. The deep fried shrimp was both crunchy and fresh, with a delicious creamy aioli sauce (also perfect with the chipotle aioli!). You have not lived until you eat the patatas bravas, cooked to a precision crunch with both aioli and a red sauce. Seafood lovers with enjoy the mussels with a creamy broth and unlimited batches of toasted sourdough slices (just dipping the bread in the sauce will satisfy the non-seafood lovers at your table!). The octopus (pulp) not only looks great, but was juicy, tasty and soft as tofu.The lamb shank on mash literally melts in your mouth and has a delicious gravy with a hint of smokey maple or something soooo yummy just like it. To complete the ensemble, we had the 3-cheese cheese cake with chocolate, which was just the right sweetness as well as the almond cake with ice cream. The star of the almond cake was definitely the AMAZING black currant compote. Still suffering a bit from altitude, we appreciated the tasty yet non-alcoholic cocktails with vermouth, pineapple and tropical options. Great for kids and parents.

Read moreServers were absolutely lost the whole night. Food took a very long time. Thank god for the bartender (spanish fellow with a man-bun). He held the place together. The young servers came to him with all their problems and he put the fires out AND made the drinks. He needs a raise.
My wife and I watch multiple health code violations while sitting at the bar. Watched a server take fruit out of a dirty glass with her bare hands. Then she grabbed a rag and began to dry off the clean glasses (inside and out) without washing her hands after touching the food in the dirty glasses. All of the female servers had hair well below their shoulders. The hair was not up. They constantly pushed their hair back with their hands and without washing their hands, handled food and clean glass/silverware. One female server touched her nose every 3 minutes and not once did she wash her hands. Unacceptable. A male server (comb over) scooped popcorn into a container with his bare hands and served it. Last but not least, we come to the "community rag". This rag was used by every person behind the bar. This rag wiped up spills and dried servers hands after they handled dirty dishes. One female server placed the tweezers used to put dried fruit into cocktails directly onto said rag.
What is happening here. They all need serious food safety training. The owner needs to sit in one night and watch the sh*tshow....
