I strongly recommend Aliberto's burritos, and just changed my review from 4 to 5 stars!
The main reason I increased my review's rating is that they recently started providing far better quality salsas, which are EXCELLENT (for the price)! The spicy roasted red, creamy spicy red, and green salsas that were included with our breakfast burrito order just yesterday (August 2025) were all new to us and tasted excellent and unique, especially for a fast food Mexican restaurant with a drive through! Their new salsas now rival if not surpass the taste and quality of salsas that we have gotten at many other local Mexican food trucks and restaurants!
As usual, we love the breakfast burritos because they are an amazing value and hit the spot. We have gotten consistently good steak, sausage, and bacon breakfast burritos numerous times. We have tried other menu items less often, but what we have tried has all been consistently good. The food reminds me of SoCal Mexican fast food restaurants, although Aliberto's (now) provides superior salsas. Besides the food, the service at Aliberto's is always very friendly, and the drive thru is super convenient. All of these reasons keep us coming back!
In my opinion, there remains a minor drawback that can be avoided easily: Aliberto's adds cheap, yellow, oily cheese to the food. In the past in my burrito orders, the cheese would clump to one side in an oily mess. Based on my experiences, I began asking for “no cheese” on all my orders, assuming the cheese they add is that cheap, oily, yellow cheese; I suggest others also avoid it. Hopefully, Aliberto's will begin to completely avoid the cheap, yellow cheese, and instead use cotija, Oaxaca, or queso fresco, even if they have to charge extra. For me, adding/upgrading to authentic Mexican cheese would be well worth it!

Read moreMoved here a year ago, this USED to be my fave taco shop, because it reminded me of home (San Diego). But, they’ve made changes recently and I’m not sure if I’ll go back.
I noticed in the past few months, the cheese has changed to what tastes like a cheaper brand. You know the taste-like a store brand cheese instead of the good stuff.
They also have been using less, and the serving sizes for plain quesadillas has gone down.
I’ve noticed serving sizes in general have been smaller.
Tonight, was the final straw though. I got a quesadilla Mar y Tierra for dinner, and woke up in the middle of the night with a sharp pain in my stomach and threw it up.
It was the last thing I ate, so I know nothing else caused it.
On top of that, I was pretty dissapointed because the quesadilla had a ton of green peppers, but very little cheese or meat. I don’t care too much about less meat, but the amount of cheese was so small, that the quesadilla didn’t keep its structure-it was more like a big, loose taco, and I had to keep scooping up the falling pieces of shrimp, Meat and peppers. Even when the filling stopped, the tortilla didn’t stick together with the other side, due to the lack of cheese.
I’m not sure if there’s someone new on the team in the recent months that has made the changes, but I’m sad that I feel like I can’t trust this place as a go to anymore.
It’s very rare I write a review with notes like this, because I like to give places a few chances, but again it’s a few months I’ve noticed the changes.
I know the menu has gotten bigger over the past few months, maybe that has something to do with the changes…
But cheese for a Mexican place is a huge deal. People can tell the difference between a quality cheese, and a cheap cheese.
I haven’t thrown up in years, it’s not a great feeling, so I hope they can figure out what happened & make it better for anyone else...
Read moreI’ve been to this place many times and find it's worth the drive from West Seattle. I love that this place has many dishes that taste just like the ones in Southern California Mexican restaurants, more specifically San Diego. I haven't found another with similar tasting food anywhere else in Seattle.
The California-style burritos, rolled tacos, and carne asada fries taste like the ones I've had, living in Southern California. It’s a nostalgic flavor for me. However, I do remember their salsas were not very good. I would always throw them out or just add a little chopped serrano and cilantro to it myself.
This last visit, a couple of days ago, was different, though. Our breakfast burritos came with three salsas (roasted red pepper, tomatillo, and an orange one I couldn't recognize), all of which were delicious! They all were spicy and fresh! I’ve even craved them with other dishes. I don’t know when they started spicing up and favoring their salsas, but that was a great idea!
The employees are always polite and friendly, and handle the orders quickly, as the drive-through is full every time I’ve gone. It’s always been a seamless experience for me, and I haven’t had a negative experience with them.
This last visit on 08/01/2025 made me very happy with the new salsa surprise to go with my always delicious “San Diego style” burritos. If it's too spicy for some people, at least make it an option for...
