We came here for breakfast before we headed to Legoland for my daughters birthday. It was close by and we wanted to get to Legoland on time so we decided this is where we will eat and head to our destination after. Seating was right away, which was great since we were on a time limit. Waiter came out fast too, friendly fellow but no birthday perk for my daughters birthday. My husband wanted to order a bacon cheeseburger but the waiter insisted that he order the Super Burger "it's the best" he stated. So my husband ordered it, and was utterly disappointed. He couldn't even finish it - he only ate half and didn't want to order anything else. He stated the burger had 0 flavor no salt or pepper. I ordered a ABC omelet and swapped out the pepper jack cheese for Swiss since I'm pregnant and didn't want anything spicy for breakfast since I'll get heartburn. The bacon was overly cooked, the omelet I'm sure was made with liquid eggs which I hate. I generally ask if the omelet is made with real eggs or liquid eggs but I forgot to ask so that was my fault. I got to the middle of my omelet and it was hard to cut a piece off, I opened the omelet up to find the Swiss cheese texturized like hard plastic. It threw me off and I couldn't finish the rest. We were all real disappointed with the experience and due to our time limit we paid and left, even if we did have time we didn't want to order anything else. UPDATE: Owner has not responded to my email I sent after they insisted for me to email them. I've noticed companies replying to reviews to look good but when you send an email - you get no response.

Ruby's is a great family friendly restaurant with great food and service. First off the atmosphere here is upbeat, fun and nostalgic with your classic 50's diner looks. From the time you arrive staff greet you with a smile and assist with getting you seated quickly. Juan our server was great and did an awesome job taking care of us with repeated trips to our table and getting us extra cardboard cars for the kids to make and play with. The cardboard cars were actually super cool and even though I am older I would probably join the kids and make one myself the next time I go out. The food here is also fantastic. The impossible burger was a great vegetarian option and the fries and onion rings were also a hit. The best part was the fact that the kids said Ruby's had the BEST chicken and they were also super happy. This is an excellent restaurant - well run with great staff like Juan who takes pride in his work and ensures everyone is well taken care of. I highly recommend this place and give kudo's to the ownership, management and staff for providing a well run organization and providing high food quality to customers.

This was an absolutely great experience here. From the moment we entered we were greeted with smiles and professionalism by the young hostess and staff. There were absolutely no issues with me not wearing a mask!! I was treated with the same courtesy and respect.... As I/WE ALL SHOULD be. They respect you as a customer, not as a sheep! For that service they get an extra star 🌟 🌟 I'd give 6 stars if I could.... The restaurant itself was clean and there was no wait at that time. The food was delicious and the portions were not the PLANDEMIC portions. We ordered the bacon cheeseburger with onion rings, a plain cheeseburger with fries and the captain's catch which had shrimp, fish, fries and coleslaw. The burgers were juicy and delicious, perfectly cooked to medium. The fish and the shrimp were also very tasty and not mostly batter like most places nowadays. One good thing about this place is that the oil never tastes old and the fish is not super greasy all the time. Their tartar sauce and cocktail sauce were very flavorful as well. We also ordered a salad and the ranch was fantastical. We also got 3 shakes which are a MUST to get when coming here. We got a strawberry banana shake, oreo shake and a double vanilla shake. The only thing that I have to say at all remotely negative about the experience was that the shakes were not thick so by the time we got them they did not stay cold/thick for very long at all. Other than that the whole experience was amazing foodwise. Now the waiter we had was by far one of the BEST waiters I've ever had at a food restaurant!!!!! I cannot remember his name right now but he was a hispanic gentleman who served us (the first booth in there to the left if you walk in the front). He was so on top of what we needed or wanted! He came back to see if we needed refills often, he was full of smiles, laughs warmth and caring but was also professional efficient and knowledgeable about the menu. We went on March 24th around 3:00-330 p.m. 2021. The staff that day at the front and waiter were exceptional. If all of their staff is anything like those 2 people I interacted with they are better off than most restaurants and deserve raises. Thank you guys for an awesome birthday meal for my son! Yes he picked Ruby's from any restaurant available to him.... because the food and atmosphere. Now because of the equal treatment and interactions I respect this business much more.

I was reminiscing about Ruby's Diner, one of my favorite dining locations at the Oceanside Pier. They had closed many years ago and the building recently burnt down. But after doing a search online, I realize that they had a location in Carlsbad.

This is my review of Ruby's Diner in the Carlsbad outlet mall.

I am very happy that this Ruby's Diner is only 15 minutes away from downtown Oceanside. Although I don't come to this mall frequently, I may start returning more often thanks to my experience eating here.

Ruby's Diner is known as a Classic American Diner that is well known for their burgers, fries & milkshakes. They're also famous for their vintage 50's & 60's themed decor & music.

Their interior is very spacious and accommodate groups and families easy. You can also choose to sit outside on the patio as well.

The vintage theme has various paraphernalia and decorations from the 60s era. They also have a functioning train set that runs a track on the ceiling above. The kids love it!

I think the only CON I found for their atmosphere was in regards to their men's restroom being too small and only having 1 stall & 1 urinal.

Their service is always courteous, fast & friendly and I love their uniforms.

Although their menu is based on an American diner theme, there are many other options to help diversify one's dining choices.

For breakfast, you can find items like eggs Benedict, omelettes, avocado toast, breakfast burritos, biscuits & gravy, chicken fried steak, waffles, pancakes, French toast, and of course, a typical American breakfast with eggs and bacon.

Their lunch and dinner menu is just as extensive.

Their portions are very fair considering the price, and overall, I love the customization options for customers who want to create their own flavor experiences by mixing & matching ingredients.

My most recent experience was with a Cobb burger, Cajun Fries and a Salted Caramel Milkshake. I loved the variance from salty bacon, to juicy burger, to seasoned crispy fries & the sweet sips of heaven!

Anytime I want a true vintage dining experience, I come to Ruby's Diner in Carlsbad to send me down memory lane....

I am beyond frustrated with my recent experience at this establishment, and I feel compelled to share my grievances in this review. Despite reaching out to corporate twice and sending two separate emails to the location, I have been met with absolute silence and no response at all. It's absolutely infuriating that my concerns have been completely ignored.

The lack of communication from this business is simply unacceptable. I expected a basic level of customer service, especially when dealing with a genuine issue with my order. Instead, I've been left feeling disregarded and unimportant.

Now, let's talk about the food. It was a total disaster. We ordered three club sandwiches, and they were a complete letdown. Not only were they lacking in flavor, but they were also served on an odd, unappetizing roll that did nothing to enhance the dining experience. And that's not all – the chicken sandwich, which we remembered fondly from a previous visit, was a complete disaster this time. The bun was entirely soggy, rendering the sandwich inedible and forcing us to throw it out. What a waste of a meal - we had to throw it out after one bite. As for the rest my family only ate half: It was genuinely the worst meal we ever had.

Even the fries, which should be a simple and enjoyable side, were disappointing. We couldn't muster more than a few bites before giving up on them too.

Overall, this experience was a complete letdown, and the lack of response from the establishment only adds insult to injury. I am determined to get a refund for this subpar meal and the wasted money. I highly advise others to be cautious before ordering from here, as the food quality and customer service are severely lacking. Save yourself the disappointment and look elsewhere for a satisfying dining experience.
