We decided to try Coohills for a date night and weren't disappointed in the slightest. We arrived half an hour earlier than our reservation but they were able to accommodate us. Our server Luke was attentive and checked on us often. The salmon dip appetizer was great and you could see the flakes of fish rather than the entire dip being a pinkish salmon flavored goop. For the entrees we had the wagyu sirloin and the American bouillabaisse. First off, the wagyu was fantastic. It was as tender as could be and brought a tear to my eye with every bite. It was served on a bed of their potatoes, had a side of asparagus, and some sort of magical sauce drizzled along the outside of the plate. Next up, the American bouillabaisse. It was chock full of seafood and included a bit of lobster, a couple scallops, clams, mussel, and some fish with a side of crunchy bread for dipping. The broth was super flavorful without being overly heavy or tasting too much of seafood. The scallops were big and buttery and the lobster was firm without being rubbery. Can't recommend either dish enough, both were wonderful. Lastly, while we were both quite full we opted to split an order of the bread pudding. I'd say, no matter how full you may be, just order the bread pudding and scarf it down, you won't be disappointed. Overall our experience at Coohills was fantastic and we can't wait to come back.

First off I want to say, I'd only write a review if it was worth sharing. It takes a lot to impress me enough to write a review. Coohills is one place that completely went above and beyond anything I'd ever expect. We had my wife's 30th birthday at this restaurant and it was absolutely amazing! The party turned out a hundred times what I thought it would be, it's beyond words to describe! The amount of effort the restaurant went through to make this a great night, was so special and memorable. The restaurants atmosphere and ambience was so incredible! The staff was so amazing, attentive, and accommodating; from the waiters, to the cooks, to the people managing the event. I was so impressed by how thoughtful and "on it" the waiters and waitresses were. They keep the guest so happy and satisfied! They were constantly coming around and checking up on everyone and working so hard. The girl managing the night introduced her self and would come to check with me to make sure everything was going good. If all that wasn't enough to make this a great night... the food the chiefs prepared was beyond words, I couldn't believe how delicious and gorgeous everything was! Some of the best food I've ever had and I've eaten at a lot of fancy restaurants! Everyone I talked to said the food was amazing and couldn't stop talking about it! Then to top of a perfect evening and when I thought it couldn't get any better... the cake that was brought out was more then I could have even imagined! It was so memorable and absolutely perfect. It blew my wife away on how beautiful it was! I was absolutely stunned by the presentation of it; the prettiest birthday cake I've ever seen! We couldn't stop talking about it and taking pictures of it... was hard to give it up to be cut in too! Not only did it look amazing but it was the best tasting cake I've ever had! It was a prefect end to a perfect night... I had to step away and thank the person who made it! The whole night definitely exceeding my expectations in every way! From the moment we walked in, we were greeted with a smile from Diane Coohill. She was extremely welcoming in helping us to our table. Diane even congratulated my girlfriend on her birthday celebration, and thanked us for sharing the evening with Coohills. She made us feel right at home, and surprised us with welcoming cocktails and desert at the end of the night. She even spoke to us about our interest in how Coohills came to be.

John, our server, was conversational and provided us the best recommendations for the evening. He was extremely knowledgeable and truly gave us the best service we've ever experienced. He really went out of his way to ensure we were taken care of. Also he gave us some great tips for a trip next summer to Alaska.

Skylar, the bar manager, went above and beyond for us. Both John and Skylar answered all our questions from cocktails to their extensive wine list. They helped us pick out the perfect bottle of wine to compliment our Colorado Bison Short Rib and Alamosa Stripped Bass. Skylar even spoke to us about their whiskey selection including some personal favorites for us to try in Boulder.

Tom Coohill brought out our main course and thanked us for joining them on our special occasion. He even sat and spoke to us like we were part of the family.

The Aspen signature cocktail was the best I've ever had. The smokey glass of the cocktail brought out so much flavor and aromas. The Crab Cakes were far and away the best we've ever had. That is saying a lot coming from my girlfriend who grew up on the coast. The bread service was equipped with the most delicious truffle butter. Never in our lives have we experienced bread and butter that spectacular. The short ribs were so savory that all you needed was a fork to enjoy them as they fell off the bone.

From beginning to end the atmosphere, staff, and experience were second to none. Our evening consisted of the best meal we have had in years, and more likely ever. From owners to servers to bar manager, the entire team made us feel special and part of the family. We will certainly be coming back to Coohills for all of our special occasions.

Ten days before our wedding in July of 2021, we were forced to switch the location of our reception dinner for a variety of reasons and wasn’t sure if we would be able to find a place in the time we had to host our group of about 40 people. Luckily, we found Coohills and Diane, Chef Tom, and their team were able to accommodate us and practically saved our wedding day! Diane and her team were super quick and responsive to all our questions and requests and worked with us on every level to make sure we had a great dinner and experience. They were knowledgeable about a few of our guests’ religious dietary needs and willing to accommodate us on every level that they could. I was really appreciative that I could speak to someone about our need for a small number of kosher-style meals without having explain myself over and over as to what that meant (as I might have had to at other venues). The overall planning and communication could not have gone any smoother considering we only had about 10 days to work everything out; and when Diane wasn’t available, her team was super quick to pick up where we had left off.

Jumping ahead to the dinner itself, everything from the food, ambience, staff, and more were absolutely fantastic. The food was delicious, vegetables perfectly in season, and the desserts were amazing as well! Although things started out not quite going according to schedule, as my wife and I were delayed getting to the restaurant, they were flexible with our guests and able to adjust accordingly while they waited for us to arrive. Throughout the dinner, the service was great, the staff were all friendly, and they were a little more patient with a couple of rowdy toddlers than they needed to be (which was also very appreciated by the moms).

All in all, I can’t say enough about Diane, Chef Tom, and the rest of the Coohills staff that worked with us leading up to our wedding dinner and on the night off. Our wedding day would not have been the same without them and their efforts. We are eternally grateful to them and will probably be visiting them for many anniversaries dinners for years to come.
