The best Mexican we've had in Colorado. This place is legit. The salsa that is complimentary has a lovely charred flavor and a slow building heat. The chips were fresh and tasty. My husband got the chicken enchiladas and said they were very flavorful. Every bite had layers of flavor because each item that goes into making the dish is well seasoned. The sour cream sauce was so yummy, it could be addictive. He said the mild green chili had more heat than he expected and it was more "hot" than "mild". The rice and refried beans were very simple but cooked to perfection and had great flavor. I had rolled up tacos that are fried, they reminded me of a taquito. I can't remember the name of them but they were really good. I had the Pastor meat which was juicy and had lovely flavor from the pineapple used. Again, the sour cream sauce on these was amazing. My child got a chicken taco which had really good grilled flavored chicken. We enjoyed churros with caramel sauce and sweet and condensed milk, tres leches cake, and coffee afterwards. The desserts were spectacular. The coffee had a hint of cinnamon and was very smooth and not at all bitter. The staff were all welcoming and polite. The service was a bit slower than other Mexican restaurants in the area but I surmise it's because everything is made fresh which is SO worth the wait, which was not unreasonable anyway. Also, we found them to be generous with the white crumble cheese (Queso fresco?) as they put it on all of our entrees and refried beans.

I'm also just coming out from "under my rock" when it comes to dining out. I'm very budget oriented. But it did occur to me that they are extremely over priced for what I received, no matter how naive I may be? I ordered the Aztec Vege Blue corn enchilada. It came prepared as 3 Enchiladas with a sparse green bean and onion filling, with queso cheese, braised spinach and a chili paste layered on top. That was just about it?! I honestly think the whole entree in the to-go Styrofoam tray weighed no more than 8 ounces! It cost me...without tip, extras or drinks... $12.91. $12 to $13 seems to be the current average price on their menu. I definitley think that's pricey!! I also don't like to get ripped off anymore than anyone else. This stuff doesnt melt and was obviously used to cut costs. It is offensive to the incredibly authentic Mexican food here and really a bad culinary decision. This place has good helpful service. I love that they have a vegetarian friendly menu. Its a 5 star (now 3 because of the fake cheese used) restaurant for flavor and freshness EXCEPT my vegetarian food always has meat pieces in it or tastes of meat. The veggies and tortillas are cooked on same spot of grill and with same utensils as the meat. It's a bummer as I don't eat here anymore because of this.
