My daughter and I pulled into Bubba's BBQ because of the great smoke smell (windows were down in our car) coming from this joint. Parking was there but a bit tight. Meaning if you have a large vehicle it could be tough, to not only to get in but to exit. Cozy and clean on the inside with memorabilia on the wall. Menus were given by Guadalupe who also took our drink order. My daughter and I both ordered the French Dip brisket sandwich. Home made au-jus and horseradish. Fries on the side as I had sweet tea and my daughter had water. The sandwich was really good. But we both thought the brisket was dry. The flavor of the brisket was very good and had that smoke taste throughout the meat. Swish cheese was slightly melted. Frankly I would've like it even better if the cheese was melted better. The au-jus was fantastic as well as the horseradish. The fries, well I wish they would've been thick cut and fresh. Thin cut fries which certainly seemed of the frozen variety. Seasoning on them was faint at best. Our server was very nice and polite. Not very outgoing which may have been her youth and not a lot of service experience. In the food business being personable/outgoing garners a more consistent client base which will ask just for you and hopefully better tips. Certainly a place that we'll come back to when we get back to Eureka Springs.

Bubba’s is a pleasant surprise for barbecue in Eureka Springs, AR. I was not as hungry as I thought I was when I ordered ribs for one. I was presented with a slab of uncut, smoked ribs with a side of beans, bread, and slaw. The ribs were a bit crisp on the outside, primarily tender on the inside between the bones. One end of the ribs seemed to have gotten too much smoke heat, causing a slight scorching as does most smoked cooked meats. The ribs had an excellent deep smoke taste to them. The sauce is served with ribs. The sauce was delicious poured over a few of the ribs. The pulled pork was some of the moist, tender meat I had tasted in a while. I was too full to finish off the ribs, so I made a to-go plate. The ribs tasted even better after an overnight setting in some sauce. The service is outstanding. They have an outdoor patio with an outhouse. Make sure you give the “house” a try if the beer or tea is too much!

We love Eureka Springs, but not the kitsch of the downtown. This restaurant is on the main road, but it's neither priced nor decorated like the downtown restaurants. Cheerful, homey, and clean, the aroma of pit barbecue sets your stomach to growling the moment you step in the door. The wait staff is very pleasant, and the service is swift. We enjoyed the pulled pork shoulder and beef brisket dinner plates. The meat is served without sauce, which was good, because I am not a fan of their sauce, which meant I didn't like the beans, either. It's very peppery and vinegary, with little, if any, sweetness. The meat was so moist and tender I didn't miss it. Their fresh-cut fries are the best I've ever had. The slaw has a delicious sour cream dressing. We'll be back!

Things have changed. My family has been enjoying Bubba's for over 40 years. Bubba's was our very favorite go to place every year when we enjoy our annual family trip to Eureka Springs each year. Today we went once again & were disappointed. The "industrial strength nachos" were the same & very good along with the OG coleslaw, but the ribs seemed different, not quite as smokey or maybe marinated well or maybe smoked as long? The french fries were terrible compared the the glory they used to be that validated the $3 extra charged for each serving subbed with meals & I mean terrible. They were cold, dry tiny things that tasted like stale potato chips. They used to be super long, greasy, tender, smokin hot deliciousness & the final nail...the BBQ sauce has changed. It is thinner, weaker. It used to be a sweet, thick, molassessey sauce our family would need 2 bottles for the table. I believe there's new ownership & I don't know if corners are being cut or what, but please go back to original ingredients, suppliers, whatever it takes. Right now, we have no interest in returning which is sad for me because Bubba's was a place our family grew up & have grown old with. Sorry, I do not like giving...

Great Bar B Q service used to be good. we have eaten here since 1987.

They have added 2 newer elder women the one named Tina was Very rude We have never been treated like this anywhere before. My son & his wife arrived a few mins before us & just waited till the male waiter (who knows us well) told him to go ahead & sit where ever he wanted. Tina yelled at him & said that he could Not sit down till we all arrived. He went back outside so we could all walk thru the door together but he was so upset he would not eat. ( she could have told him nicely.) When I went to pay I tried to explain that we had been coming there for years. & she just kept yelling over me YOU OWE $87 over & over. ( The other elderly woman chimed in to defend her without even know the whole story, & clearly had no interest in knowing either.) I finally said I will let the owner know how you have treated us but we will never come back. And she yelled GOOD I hope you never do then said loud enough for everyone in the restaurant to hear " they just complain every time they come in here." Which is not true. She doesn't know us & I don't know her . But as long as she is there we...
