Stopped in on Saturday evening for dinner. Had a great experience. Tried the ribs, pulled pork, and the brisket. Ribs were tasty with just right flavor and a little stickiness to the glaze, just right. Pulled pork celebrates the pork. You can add sauce to your taste but it comes straight off of the smoker with just the rub and the bark. I love that they have nothing to hide, I want to taste the pork shoulder before I sauce it and this was wonderful. And the brisket... Outstanding! Would I like a bit more bark, Yes. Do I prefer a bit more spice, Yes. But if I want to please just me then I should cook it myself. These guys are making fantastic Q way up on the NorCal coast and they can hang with anything I have had in CA. This is not EXACTLY central TX bbq but we're not in central TX.

The creamy slaw was really good and would be welcome at any church picnic. The poppers are fun with a little something extra in the cream cheese. Definitely worth trying a few. AND... the deviled eggs are worth the drive all by themselves. Now I'm not saying we snuck in a bottle of bourbon and paired it with the porkbelly topped eggs. But if we had, I bet it would have been Out Of This World! ( okay, We did. )

So why only 4 stars? Well, I try to take these notes pretty seriously and the food and service were 5 star all the way. The seating and decor are plain and a little cafeteria like. Very clean and I look forward to returning when they have made a ton of money and can put a few dollars into sprucing the place up. Please don't hold that against them. Some people believe our humanity was born from the nutrition derived from "cooked" food over an open, wood fire as the nutrients became more bio-available and our brains grew. Humboldt Smokehouse (HS) has seemingly perfected those first attempts tens of thousands of years ago of using smoke and heat to enhance taste and nutrition. This is NOT your typical smokehouse/BBQ food which often consists of lower quality meat cuts over-smoked and dried-out so that the any flavor is overwhelmed by the acrid smoke taste. The meat is tender and juicy with the perfect amount of smoke flavor. Even the burnt ends are juicy with just the right amount of char.

One can enjoy this epicurious delight simply plain or with a perfect blend of sauces, condiments, and sides which provide what you personally prefer in the balance of heat and sour (house-pickled jalapenos), sweet, and even more savory! Try the burritos (Mac Daddy for me) or bowls, or a not-so simple sandwich, you simply can't go wrong with any of the offerings; the mac and cheese is...

My family is visiting the area currently. We saw this BBQ places listed as the best in town.

Super excited to try something good we stopped in and were disappointed to say the least. We spent over $70 for food we could not finish at all. While there I decided to look at more reviews and wish I had before stopping in. Someone else said the following:

“Voted "the best in town" but serving mediocre food. Who is voting for that title?”

And I completely agree.

They were out of most things on the menu. So I got chopped brisket. Which was somehow burnt but also cold. My beans were like warm and my mashed sweet potatoes were just that. I think mashed in the water they were boiled in.

Only one of the BBQ sauces was palatable, the mustard sauce was actually really good. I didn’t think of writing a review until after I threw away my food, so I do not have a photo of that. I also could not get photos of the several misquotes all over the restaurant.

My daughter was also scared by the huge spider web in the window next...

I took a bite or two of each thing and threw the rest away. I can only hope the owner has no idea about all the corners being cut in their restaurant because every single item was disgusting, dry leftovers, CLEARLY not freshly made at all and clearly reheated a few times prior.

The creamy coleslaw...everything but creamy - tasting wholly of cabbage. There's room for such potential, but currently not worth the $10-$12 tag for products listed. Good for a BBQ fix, but not for a hearty meal option.
