If you're looking for specialty coffee in Humboldt, Witness is a must-visit. Though they've only been open a little over a month, they've already become my go-to spot for both coffee and an eclectic community hub.

The setting is very inclusive and inviting, the team is built of amazing people, and every cup of coffee is clearly made with care and skill. At this point, I think I’ve tried nearly everything on their menu—both food and drinks—and I can honestly say I’d recommend it all. My usual is a cappuccino and their avocado toast (but don't miss out on their breakfast tacos or specialty lattes with their handcrafted syrups).

They’re proudly 100% plant-based, and even if that’s outside your usual comfort zone, I really encourage giving them a try. The quality they bring to every item is something truly unique for this area—all while being wonderfully affordable.

Had the chance to visit Witness Coffee Roasters while on a trip into Humboldt and it was such a wonderful experience. The shop is so cute and cozy, with its decor and style seems to be chosen intentionally to create a warm atmosphere where you would want to spend the day, which is what we did when doing some work at the large windows on a particularly chilly morning. I ordered the Mist in the Trees, which is an earl grey latte, and the avocado toast and it was delicious. I especially loved the wide array of plant milk options as this is a vegan cafe—I tried a nut milk that I had never heard of before this —and that the price is already factored into your drink so you don’t need to pay more for plant based milk like in most other cafes! I huge plus and move forward for sustainability as the owners care deeply and have a heart for plants, animals...

Please note, this is a fully vegan coffee shop! I personally don’t have any issues with tofu or egg replacement options in my breakfast food, but it would have been nice to see somewhere obvious on the google listing that this is a plant based shop (yes I could have read the reviews in depth but I needed my coffee, saw this place wasn’t a chain, and hit go !!). My oat milk latte was good, but nothing to write home about. There was some awkward tension and conversation between the employees while we were ordering. The environment is cozy, and several people were there obviously for meetings together. Overall a decent experience, just wish I had known I couldn’t get dairy milk...
