Konstruct Brewing — Restaurant in Fort Collins

On Cinco de Mayo, around 6:45 PM, my husband and I decided to visit your brewery to try the special Hibiscus Margarita. It was great to see Andrea, a former Envy patron, working behind the bar alongside another shorter woman with dark hair—unfortunately, I didn’t catch her name. We ordered barbacoa tacos and our first round of margaritas. It was extremely slow, yet the other bartender couldn’t even bring us our drinks, which we felt stemmed from a lack of effort. The margaritas were as advertised—made with Tres Generaciones Tequila.

My husband went to order another Hibiscus Margarita along with some queso and chips. The other bartender did bring us the queso and chips, but we were disappointed. It wasn't great to find a pile of broken chip pieces hidden under a few larger ones on top. After that, she made my husband’s Hibiscus Margarita but swapped out the Tres Generaciones tequila for Espolon tequila, which is a less expensive option. Unfortunately, after just a few sips, my husband experienced a severe allergic reaction to that tequila, and we had to leave. Luckily, we got home in time for my husband to attend to this potentially life-threatening reaction.

I want to commend Andrea, who was kind enough to comp our bill—though I believe she shouldn’t have had to take that on due to her partner’s shortcomings. If you want to thrive in a town filled with countless breweries, this is not the kind of service that will keep customers coming back. Very disappointing.

REBUTTAL TO THE OWNER’S COMMENTS: It’s truly unacceptable that you're trying to blame this situation on my husband. He does not have Celiac disease. He had no idea he was allergic to the CHEAP tequila that your bartender substituted for the Tres Generaciones tequila listed in the Hibiscus Margarita ingredients. What should have happened is that she should have come to our table to explain that you were out of the Tres Generaciones tequila and asked if an alternative would be acceptable. That is what should have been done. Cutting corners and possibly endangering someone’s life is ridiculous. She should not be serving drinks if she does not have the decency to ask the customer if a change is okay.

Perhaps, as the Owners, it's just a common practice to instruct your bartenders to use a cheaper tequila for the second drink, thinking customers won’t notice the difference. You charge the same price but incur lower costs for the business. That seems much more plausible.

Konstruct Brewing has officially blown me away! As a self-proclaimed beer lover and brewery connoisseur, I can honestly say this place has jumped straight to the top of my list. From the incredible beer selection to the mouthwatering food and the genuinely welcoming atmosphere, my visit today was nothing short of perfect.

Let's start with the beer – simply outstanding! I thoroughly enjoyed my beer flight, which showcased the breadth and quality of their brewing. Every single beer was expertly crafted and bursting with flavor. While they were all fantastic, the Pilsner truly stood out as my absolute favorite – crisp, refreshing, and perfectly balanced.

The food was equally impressive. We started with the Pretzel Bites with Queso, which were the perfect salty and cheesy accompaniment to the beer. The flatbread pizzas we ordered were also delicious, clearly made with fresh, high-quality ingredients and bursting with flavor.

But what truly sets Konstruct Brewing apart is the incredible family-operated feel and the genuine warmth of the people who run it. I had the pleasure of meeting the owner's son and niece at the bar, both of whom were friendly and knowledgeable. Shortly after, I had the privilege of meeting Brian, the owner and brewer. What a fantastic guy! His passion for brewing and his brewery is evident, and he took the time to chat with us and share his insights.

What truly made my experience exceptional was Brian taking the time out of his busy evening to come over to our table and meet my 20-month-old daughter. It was such a thoughtful and genuine gesture that truly speaks volumes about the kind of people behind Konstruct Brewing. It's rare to find a place where the owners are so hands-on and genuinely care about their patrons. Places like Konstruct Brewing are truly a gem. They offer not just exceptional beer and food, but a welcoming and personal experience that makes you feel like part of the family. If you're looking for a brewery that ticks all the boxes – incredible beer, delicious food, and a warm, family-run atmosphere – then look no further than Konstruct Brewing. When I first walked in and took a seat, I noticed there was no one at the bar and no employees in sight. After about ten minutes, someone finally came out, but never acknowledged me and there were only 4 tables going. I almost left, but decided to walk across the dining hall to the bar and ask, “Is this counter service only?” She confirmed that it was. Once I understood, I ordered a drink and some food.

While the cocktails were just okay, the food was absolutely amazing! I also tried one of their beers, which was really good. Overall, my rating for the food is high because it was truly outstanding. However, I have to lower the score for service, as I felt a bit lost as a visitor and initially felt ignored.
